How to choose fresh and delicious carp
- You should choose live carp, thick and plump.
- Choose carp with dark gray scales as they are river carp and will be very tasty.
- Avoid buying carp that are spawning as they will be skinny, and the meat will not taste good anymore.
How to prepare Carp Porridge

Prepare the carp
When you buy carp, clean the scales, remove all the internal organs, and scrape off the black skin inside the belly of the fish.
Next, use ginger wine and salt to rub on the fish to remove all the slime (if you don’t have ginger wine, you can use white wine and smashed ginger to clean the fish). After that, wash the carp thoroughly with water.
How to clean carp without a fishy smell:
- Use salt to rub the entire body of the fish for about 2 minutes, then rinse with water; the fishy smell will disappear.
- Soak the fish in a diluted saltwater mixture for 10 – 15 minutes, then rinse with water to completely remove the fishy smell.
- You can also soak the fish in rice water for about 15 minutes; rice water effectively removes the fishy smell from the fish.

After preparing the fish, prepare a pot and add 2 liters of water along with a small sliced ginger. Place the pot on the stove and bring it to a boil.
When the water is boiling, add the carp to the pot. Cover the lid and cook the fish for 10 minutes. Then, gently remove the fish from the pot.

Separate the fish meat and filter the fish bones
Wait for the fish to cool down a bit, then proceed to separate the fish meat from the bones and tear it into bite-sized pieces. Be careful to remove any small bones.
Next, put the fish bones into a mortar and use a pestle to pound them finely. Then pour boiling water into the mortar, using chopsticks to stir evenly to extract the broth from the fish bones.

Roast the rice and cook the porridge
Mix 100g of regular rice and 50g of sticky rice, then wash thoroughly and drain.
Next, place a pan on the stove and add the rice mixture to the pan, roasting over medium heat for about 5 minutes, until the rice grains turn slightly opaque.
Note: Use chopsticks to stir the rice continuously during the roasting process to prevent it from burning.
After roasting, put the rice into a rice cooker. Then, place a strainer on the cooker and pour the pounded bone water through the strainer to filter out the broth.
Next, add 2 liters of boiling water to the cooker and turn on the cooking button for 30 – 40 minutes.

Stir-fry fish
Place a pan on the stove and add 2 tablespoons of annatto oil. Wait for the oil to heat up and then add 2 tablespoons of shallots (scallion bulbs) and sauté until fragrant.
Next, add the fish to stir-fry. Season with 1 tablespoon of fish sauce, 1/2 teaspoon of seasoning powder, and 1/2 teaspoon of pepper.
Gently stir and fry on low heat for about 5 minutes to allow the fish to absorb the seasoning evenly.
Tip:
- Stir-frying the fish helps it become firm, delicious, and not fishy.
- If your child cannot eat spicy food, do not add pepper.

Completion
When the rice porridge has softened, add half of the fried carp and cook for an additional 5 – 10 minutes.
While waiting for the porridge to boil again, chop the green onions, water spinach, fresh chili, and lime.
Once the porridge is done, scoop it into a bowl, then add the fried fish pieces and herbs on top, and get ready for the little one to enjoy!
