What is Sapporo Ramen?

  • Sapporo ramen is a traditional dish from Japan, produced in the city of Sapporo – Hokkaido province.
  • The broth of Sapporo is simmered from pork bones for many hours, then soy miso paste is added to create a thick, rich consistency. The ramen noodles are made from wheat, and in Sapporo, they typically make large and thick noodles.

How to choose fresh carrots

  • First, to choose fresh carrots, you need to observe the color of the carrot; fresh carrots have a bright orange color, shiny skin, and are not rough.
  • In addition, you should choose carrots that have a balanced size, feel firm when held, and have a certain hardness.
  • Avoid buying carrots with wilted skin, scratches, or tiny spots; they feel soft to the touch and have lush leaves at the base, as these carrots are less sweet and have low nutritional value.

  • You should choose onions with a thin skin, uniformly shiny color, and feel a certain firmness when touched, making them quite sturdy to hold.
  • Avoid choosing sprouted onions; when you touch them, you can feel hard and soft spots, and the color is uneven because these bulbs may not be fresh and can be bitter.

How to choose fresh and delicious pork

  • First, you should observe the color of the meat; fresh pork will have a bright color, pale pink or light red, and the fat should be slightly pinkish white. When smelling, there should be a characteristic pork scent, not a foul odor.
  • Additionally, use your hand to gently press on the meat to feel its firmness; it should not be too hard or too soft and should have a certain elasticity.
  • You should choose pieces of pork where the meat and fat are separate but tightly attached, making it difficult to separate them by hand.
  • Avoid choosing pork that has a pale color, is slimy and shiny, with the meat and fat separating from each other, especially if there is an unusual odor, as this indicates that the meat has spoiled.

How to prepare Sapporo ramen

  • Cooking pork fat

    Wash the pork fat with diluted salt water, then rinse it clean with water. After that, use a knife to dice the pork fat into equal parts.

    Place a pot on the stove, add 30ml of water along with the prepared pork fat, and cook over medium heat until it turns golden brown, then pour the mixture through a strainer to collect the pork fat.

  • Preparing ingredients

    Carrots should be peeled, washed clean, and then cut into long strips. Onions are peeled, cut in half, and sliced into equal long strips.

    Garlic should be peeled, washed clean, and then pressed lightly with a knife to flatten it, and then diced. Ginger should be washed clean, peeled, and then diced.

  • Stir-fry pork with vegetables

    First, add all the oil rendered from the pork fat into a pan and heat it over medium heat. Once the oil is hot, add the minced garlic and ginger, sautéing for about 1 minute until golden brown.

    Next, add 1 teaspoon of Toban djan chili paste for a distinctive aroma. Once you can smell the light, characteristic fragrance of the Toban djan, add 200g of ground pork and stir-fry until the meat is cooked.

    Then, gradually add the carrots, onions, and bean sprouts, stirring well for about 3 – 5 minutes until all the ingredients are evenly cooked.

  • Cooking the broth

    The pork bones you bought should be washed clean. Then, put them in a pot with 1 liter of water and boil for about 5 – 7 minutes until the pot produces foam; use a ladle to skim off the foam, continue boiling for another 2 minutes, and then turn off the heat.

    Remove the meat from the pork bones, wash it clean, and then put the bones into a pressure cooker with 2 liters of water to simmer for about 3 hours.

    Next, add 1 liter of water and 4 chicken feet to simmer for another 6 hours, until the pork bones and chicken feet are soft, then gradually add the following ingredients to the pot: a bit of green onion, 1/2 onion, 1/2 garlic, 1/4 cabbage, a few slices of thinly sliced ginger, and continue to simmer for about 1.5 – 2 hours.

    Then, strain through a sieve to obtain tonkotsu broth. To make the broth, you add the tonkotsu broth to the stir-fried ingredients prepared in step 3 and cook over medium heat. After about 2 minutes, when the broth starts to boil, add 50g of miso powder and stir well.

    Next, gradually add 1 teaspoon of chili powder and 1/2 teaspoon of seasoning powder, then cover the pot and wait an additional 10 minutes for the broth to boil evenly before turning off the heat.

  • Blanch the noodles

    Prepare a pot of boiling water for 10 minutes, when the water is boiling, add the ramen noodles and blanch for 3 minutes, use a slotted spoon to lift the noodles out and let them drain.

    Place the blanched ramen noodles into a bowl, then pour the hot broth into the bowl of noodles and top with a teaspoon of unsalted butter and a little ground pepper on the surface of the bowl.
