Ingredients for Vegetarian Miso Ramen For 2 people

Ramen noodles 2 pieces Firm tofu 200 gr Dried shiitake mushrooms 10 pieces Kombu seaweed 20 pieces (28 gr) Unsweetened soy milk 240 ml (can be replaced with other nut milks as desired) White miso paste 2 tablespoons Spicy bean paste 1 tablespoon Green onions 6 stalks Ginger a little Sesame seeds 2 tablespoons Cornstarch 1 tablespoon Soy sauce 1/2 tablespoon Salt a little Cooking oil 2 teaspoons

How to choose good dried shiitake mushrooms

  • The shape of dried shiitake mushrooms is similar to fresh shiitake mushrooms, so choose mushrooms that are not broken and have a light brown cap (without much color variation).
  • Do not buy mushrooms that smell musty or have strange odors, or show white mold spots.

White miso paste

  • White miso paste, also known as Shiro miso, is primarily made from rice, so it often has a cloudy white or ivory color. This type of miso is commonly used to make miso soup or seaweed soup.
  • Compared to other types of miso, white miso is the least salty, so it is often used for marinating or for thinly sliced meats.

Spicy bean paste

  • Spicy bean paste is made from soybeans, chili peppers, salt, and flour. The paste usually has a deep red color, a strong fermented bean aroma, and a salty, spicy taste.
  • In cooking, spicy bean paste is often used as a seasoning for making sauces when cooking or for dry marinating.

How to make Vegetarian Miso Ramen

  • Prepare the broth

    To prepare the broth, you boil a pot of water, adding 10 shiitake mushrooms and 20 pieces of seaweed.

    Then turn off the heat, use a ladle to remove the mushrooms and seaweed, and take 1 liter of broth for cooking the noodles later.

  • Prepare the ingredients

    Peel and finely chop the garlic and ginger. Use a pestle to crush the sesame seeds.

    Remove the roots from the green onions, wash them clean, chop them finely, separating the green parts from the white parts.

    After boiling, cut the mushrooms in half.

    Cut the tofu into bite-sized cubes.

  • Fry tofu and sauté mushrooms

    Coat the tofu evenly with 1 tablespoon of cornstarch.

    Heat a pan on the stove, add 1 teaspoon of cooking oil, and pan-fry the tofu until it is golden on both sides, then remove the tofu.

    Continue to add the mushrooms to the pan with 1/2 tablespoon of soy sauce and sauté for about 2 – 3 minutes, then transfer the mushrooms to a plate.

  • Prepare cream sauce

    Sauté the chopped white onion in 1 teaspoon of cooking oil until fragrant, then add minced ginger and garlic.

    Add 2 tablespoons of white miso paste and 1 tablespoon of soybean paste to the pan and stir well.

    Next, add the prepared broth, cover, and simmer for 5 minutes.

    When the broth is boiling, stir while adding 240ml of unsweetened soy milk and sesame seeds, let the broth boil for 5 – 10 minutes, then turn off the heat.

    To blanch the noodles, gently knead them with your hands and then drop them into a pot of water.

    Blanch for about 3 – 5 minutes until the noodles are soft, then take them out into a bowl.

    Add the broth, fried tofu, shiitake mushrooms, green onions into the bowl and enjoy your noodles.
