Ingredients for Grilled Enoki Mushroom Tofu Rolls Serves 2

White tofu 200 gr Enoki mushrooms 100 gr Chili 1 piece Lettuce 50 gr Vegetarian seasoning 1.5 teaspoons Roasted sesame 3 teaspoons (can be replaced with roasted peanuts) Vegetarian char siu marinade 1 tablespoon Vegetarian oyster sauce 1 tablespoon Pure honey 1 tablespoon (optional) Ketchup 2 tablespoons

How to choose good enoki mushrooms

  • Choose mushrooms that are fresh, not bruised, with intact roots that are not opened. The mushroom package should not have any leaks, indicating good quality mushrooms.
  • Avoid mushrooms with spots on the stems or that are turning yellow, as these may be contaminated and could affect health.
  • Pay attention to the expiration date (if buying mushrooms packaged in plastic bags); do not use mushrooms past their expiration as they can cause food poisoning.
  • You should also buy mushrooms from reputable sources to ensure health safety.

How to prepare Grilled Enoki Mushroom Tofu Rolls

  • Prepare the ingredients

    Cut the tofu into thin slices about 0.5cm thick. Next, fry until golden in a hot oil pan over low heat, then remove.

    Soak the enoki mushrooms in vinegar water and salt for 5 minutes to clean and eliminate the smell.

  • Marinate the tofu

    Marinate the fried tofu with 1 tablespoon of honey, 1 tablespoon of char siu marinade, mix well and let it sit for 20 minutes to absorb the flavors.

    Separate the enoki mushrooms into pieces about the size of a pinky finger, wrap tofu around the mushrooms, then skewer with a bamboo stick (or toothpick) to secure it, one bamboo stick can skewer about 6 rolls.

  • Grill the Tofu

    Place oil on the grill, put the mushroom tofu rolls on to grill over low heat for 3 – 5 minutes, or until the tofu is just dried. Arrange the tofu on a plate with vegetables, use a spoon to drizzle sauce over, and sprinkle some roasted sesame seeds and chili.

    The tofu is chewy, rich, and soft, while the mushrooms are crunchy, and the savory sauce will make you crave it. The dish pairs well with soy sauce or sweet and sour vegetarian fish sauce!
