How to choose fresh ingredients
How to choose good chicken eggs
- When choosing chicken eggs for your baby’s weaning meal, it’s better to choose local chicken eggs. Local chicken eggs are smaller than regular chicken eggs and have a slightly white shell.
- For regular chicken eggs, to select fresh eggs, choose those with a rough, slightly textured surface; smooth-surfaced eggs have been stored for a longer time.
- Additionally, you can hold the egg and shake it gently; if the egg is dense and has no hollow sound inside, then it is a fresh chicken egg.
How to choose fresh and delicious spinach
- When selecting spinach, choose bunches with the root still attached, dark green leaves, and fresh without wilting.
- You should buy spinach packaged in bags at supermarkets or vegetable stores in Da Lat to limit the chance of purchasing wilted, bruised vegetables and those that have been sprayed with chemicals.
- Avoid buying spinach that has been soaked in water, as it will quickly become bruised and discolored when cooked, losing its crispness and deliciousness.
How to make Rolled eggs with spinach (bina)
-
Prepare the spinach
Wash the spinach leaves gently with water to avoid bruising, soak in diluted salt water for about 5 minutes, then rinse quickly with water.
After washing, finely chop the spinach leaves.
-
Make the egg mixture
Break 2 eggs into a bowl and add finely chopped spinach, 2 tablespoons of dashi broth, and 1/2 teaspoon of salt, then whisk the egg mixture until well combined.
Tip- You can buy dashi broth at supermarkets, imported goods stores, or you can make dashi broth yourself following the instructions below.

- To avoid creating too many bubbles, whisk the eggs gently and in one direction.
-
Fried Eggs
Add 1 tablespoon of cooking oil to the pan, heat until the oil is gently bubbling over medium-low heat.
Then, pour a portion of the eggs into the pan, tilting to spread the eggs evenly across the surface of the pan. When the surface of the eggs has set and can be easily flipped, roll the eggs up.
Move the rolled eggs to one side of the pan, add a bit more cooking oil, and pour in another layer of eggs. Roll the newly fried eggs into the original rolled eggs.
Continue doing this until all the egg mixture is used up.

Final Product
The fried spinach egg roll has a shiny golden color with green accents, looking very appealing. The eggs are rich and soft, while the spinach is fresh and light, making it very easy to eat and delicious. Your kids will definitely love this dish!
