  • When selecting spinach, choose bunches with the root still attached, dark green leaves, and fresh without wilting.
  • You should buy spinach packaged in bags at supermarkets or vegetable stores in Da Lat to limit the chance of purchasing wilted, bruised vegetables and those that have been sprayed with chemicals.
  • Avoid buying spinach that has been soaked in water, as it will quickly become bruised and discolored when cooked, losing its crispness and deliciousness.

  • Prepare the spinach

    Wash the spinach leaves gently with water to avoid bruising, soak in diluted salt water for about 5 minutes, then rinse quickly with water.

    Break 2 eggs into a bowl and add finely chopped spinach, 2 tablespoons of dashi broth, and 1/2 teaspoon of salt, then whisk the egg mixture until well combined.
