How to Choose Fresh and Delicious Bananas

  • For this banana ice cream dish, you can use any type of banana, however, it is recommended to choose Siam bananas (sứ bananas), green bananas, or Western bananas for a richer sweetness and aroma.
  • Choose bananas that are just ripe; unripe bananas will taste bitter, while overripe bananas will have an overly sweet taste that is not pleasant.
  • Natural ripe bananas that are good for health will have a dark yellow peel with brown and black spots; when gently squeezed, you can feel the softness of the fruit’s flesh.
  • Avoid buying bruised bananas or excessively large bananas as they may have been treated with a lot of chemicals or growth hormones.

  • Roast and Crush Peanuts

    Place a pan on the stove; when the pan is hot, add peanuts and roast them on low heat. Roast until the shells crack and the peanuts become fragrant, then turn off the heat.

    After that, transfer the peanuts to a bowl to cool and remove the shells. Then crush the peanuts lightly, without crushing them too finely.

  • Prepare the bananas

    Peel the bananas, remove any fibers (if present), then cut them in half, and continue slicing lengthwise once more for large bananas. For smaller bananas, just cut them lengthwise in half.

    Use a knife to flatten the bananas to a thickness of about 1/3 of a finger.

    Place the pot on the stove, simmer over low heat until it gently boils, then add 5g of vanilla powder, followed by the tapioca mixture, stirring until it returns to a boil. Then add 150ml of unsweetened fresh milk and cook until you see small bubbles forming at the edges, avoiding letting the mixture boil too vigorously.

    Prepare 1 glass or plastic container to hold the ice cream.

Tips for successful execution

  • You should use canned coconut milk, as freshly squeezed coconut milk contains more water, which can easily lead to ice crystals when making banana ice cream.
  • Do not let fresh milk boil vigorously, as boiling fresh milk strongly will cause it to lose its nutritional components.
  • If the ice cream is too hard after being in the refrigerator overnight, take it out and let it sit at room temperature for about 15 minutes before eating.
  • Since the banana ice cream is made in whole pieces, it cannot be stirred to alleviate the ice crystal situation.
