How to choose ingredients for delicious shrimp and broccoli cheese porridge
How to choose good shrimp:
- For cooking porridge for children, you can choose small shrimp, which although small in size, have a sweet and rich flavor. Choose shrimp that are pinkish-white, healthy, and fresh.
- Shrimp shells should be shiny and smooth. The body of fresh shrimp should be elastic.
- The head of the shrimp should still be fresh, avoiding dark spots.
How to choose good broccoli:
- Choose broccoli that has a dark green color, as it is tastier and sweeter. The stem should be firm, not soft or mushy.
- The head of the broccoli should have a rounded curve, which is better than a flat bud.
- There should be no dark spots, scratches, or rot on the stem.
How to prepare Shrimp and Broccoli Cheese Porridge
-
Prepare the shrimp
You can rinse the shrimp briefly before processing: use scissors to cut off the head, tail and peel the shrimp. Next, use a toothpick to remove the shrimp’s intestines.
Rinse the shrimp once with water, drain and then chop the shrimp finely.
Quick tip for removing shrimp intestines:
- If there is still shrimp shell: Count backwards from the tail of the shrimp towards the body, at the second groove between the shrimp shell segments, use a toothpick to poke through and pull the shrimp intestines out.
- If there is no shrimp shell: Use a knife to make a lengthwise cut along the shrimp’s back, then use a toothpick to extract the intestines.
-
Prepare other ingredients
Take the top buds of the broccoli, chop them into small pieces and soak them in diluted salt water for about 10 minutes to remove impurities.
Meanwhile, peel the onion and cut it into small dice.
-
Sauté the ingredients
First, rinse the rice briefly with water and let it drain.
Then, place a pot big enough to cook the porridge on the stove, heat 1 tablespoon of cooking oil over medium heat to sauté the onion until fragrant.
Next, add all the finely chopped shrimp, stir-fry until the shrimp is firm and turns red. At this point, add all the rice into the pot, stir well until the rice grains appear dry.
Tip: If you have time, you should soak the rice for about 1 – 2 hours before cooking the porridge, which helps the porridge to become soft and tastier. -
Cook the porridge
When the rice grains are slightly dry, add 700ml of water and cook the porridge over medium heat.
Once the rice has fully expanded, add the broccoli and cook until soft, then season to taste with 1/2 teaspoon of salt and 1/2 teaspoon of sugar. Stir well and add a slice of cheese before turning off the heat.
