How to Choose Fresh and Delicious Pork Ribs
- Good quality pork ribs have a light pink but bright color, when pressed, the meat feels elastic and firm, with a characteristic pork smell or no smell.
- Smaller and flatter ribs will have more meat than larger and round ones, however, if the ribs are too small, they may be from young pigs, resulting in poor quality meat and safety concerns.
- Additionally, do not purchase if you see ribs that are discolored, soft and mushy, leaking water, or have a foul odor, as these are old and not good quality.
- For cooking porridge, you should choose ribs that have both lean meat and fat to make the porridge softer and richer.
How to Prepare Hanoi Rib Porridge

Mix and Soak the Rice Flour
Add 100g of rice flour and 10g of glutinous rice flour into a bowl with 250ml of clean water, stir well until the flour completely dissolves. Let the mixture sit for 3 hours; the longer you soak the flour, the thicker the porridge will be.
After 3 hours, the flour will settle at the bottom of the bowl. At this point, pour off the water on top and add fresh water, stir well, and let it settle again. Repeat this process about 2 – 3 times.
On the last time, drain all the water, and use the settled flour to cook the porridge.

Prepare and Simmer the Pork Ribs
Buy pork ribs, wash them clean, then blanch them for about 2 – 3 minutes in boiling water, then remove and rinse again thoroughly.
Put the pork ribs into a pot with 800ml of clean water, turn on low heat and simmer for about 1 hour to extract the sweet flavor from the ribs.

Filtering the meat
Next, take the pork ribs out, filter the meat, and discard the bones. The broth from the ribs will be kept for the next step of stirring the porridge.
Mix the rib meat with 1 teaspoon of fish sauce and marinate for about 10 minutes to make the porridge more flavorful.

Stirring the flour to cook porridge with meat
Remove some of the fat from the broth and add the flour prepared in step 1, stirring well.
Turn on a medium-low flame and continuously stir until the flour is thick and smooth; if it’s too thick, you can add a little water. Then cover the pot and let it simmer for about 20 minutes.
Next, add the rib meat to the porridge, then season with 2 teaspoons of seasoning powder, stir well, and cover the pot to cook for another 5 minutes.
Finally, add 1-2 teaspoons of fish sauce according to taste, stir well, and turn off the heat.

Scoop the porridge into a bowl, add some chopped fried dough on top, and sprinkle a little ground pepper and chili powder to finish.
