Next, extract the snail meat, scrub the snail meat with a mixture of salt and lime juice.
Then, use a knife to cut off the stomach part of the snails at the head and rinse the snails again with clean water.

With 500g of fresh bamboo shoots, wash thoroughly with water 2 – 3 times, then slice into thin strips. Place about 1 liter of filtered water on the stove, bring to a boil, then add the sliced bamboo shoots to blanch and drain in a basket, allowing to drain.

Wash 2 tomatoes clean with water, drain and then cut into wedges. Peel the shallots, wash clean, drain, and then chop finely.

When the water in the pot is boiling vigorously, add a little seasoning, a little salt, then add the stir-fried bamboo shoots and snail meat, simmer over medium heat for about 5 – 7 minutes and taste again to adjust the seasoning before finishing.
