  • To choose fresh and delicious stuffed snails (black apple snails), select strong ones with a black, smooth, shiny shell that has no scratches.
  • Choose live snails to ensure freshness and taste; if you touch a snail that is opening its mouth and it closes immediately, that is a fresh snail.
  • Stuffed snails are different from golden apple snails; they do not have any stripes on their shells. If you find snails with stripes while selecting stuffed snails, do not buy them, as they are weak and not delicious.
  • If you want to buy shelled stuffed snail meat, make sure to choose those that still have the body and intestines intact, firm, and not soft or smelly.

How to choose fresh bamboo shoots just right for eating

  • When buying bamboo shoots, pay attention to choose those that are light yellow, have stripes, thin skin, are not wilted, and have no black spots on their surface.
  • Select bamboo shoots that are coarse, with evenly sized segments, straight, not bent, young, looking juicy and crisp. When sniffed, they should have a distinctive aroma.
  • You should not choose bamboo shoots that are too white, as they may have been soaked in chemicals, which does not guarantee quality.

  • To buy good tomatoes, you should choose those with a bright red skin, evenly colored. The outer skin should be shiny, not scratched or bruised.
  • You should select tomatoes of moderate size, not too big or too small.
  • Hold the tomato in your hand and feel it firm, round, and juicy. Bringing it to your nose will allow you to sense the characteristic aroma of ripe tomatoes.
  • You should avoid buying tomatoes that have tiny black spots on the skin or are too soft. This indicates that the tomatoes have been harvested for a long time or are about to spoil.

How to prepare Snail Noodle with Bamboo Shoots

  • Prepare the snails

    First, wash 1kg of stuffed snails thoroughly with water and let them drain. Place the snails into an pot, add 5 stalks of lemongrass and 10gr of lime leaves on top, cover, and boil for about 4 – 5 minutes, then take them out.

    Next, extract the snail meat, scrub the snail meat with a mixture of salt and lime juice.

    Then, use a knife to cut off the stomach part of the snails at the head and rinse the snails again with clean water.

    • Method 1: Place some metal utensils like spoons, chopsticks, etc., in a metal basin. Then soak the snails in it for 3 hours and rinse with clean water several times.

    • Method 3: Mix a combination of fermented rice, vinegar, and chili in a basin, then soak the stuffed snails in it for 2 hours, and afterwards rinse with water.

  • Prepare other ingredients

    With 500g of fresh bamboo shoots, wash thoroughly with water 2 – 3 times, then slice into thin strips. Place about 1 liter of filtered water on the stove, bring to a boil, then add the sliced bamboo shoots to blanch and drain in a basket, allowing to drain.

    • Method 3: Peel the bamboo shoots and soak them in lime water. Then, boil several times until the cooking water is clear, then remove and rinse well with filtered water.

    Wash 2 tomatoes clean with water, drain and then cut into wedges. Peel the shallots, wash clean, drain, and then chop finely.

    Cut off the roots of the green onions, wash clean, and chop small. Carefully pick a small amount of herbs for garnish, discard wilted or spoiled leaves, wash clean, and allow to drain.

    Place a pot on the stove, add 2 tablespoons of cooking oil, a little chopped shallots and sauté until fragrant.

    When the shallots start to turn golden, add the prepared snail meat, season with 1 teaspoon of fish sauce, then stir-fry the snail meat until it is firm and the liquid evaporates. Transfer the snails to a bowl and set aside.

    Next, add 2 tablespoons of cooking oil to the pot, wait for the oil to heat up, then add the prepared bamboo shoots with 1 teaspoon of fish sauce, stir-fry for about 5 minutes for the bamboo shoots to absorb the seasoning, then transfer to a plate.

    Next, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add the tomatoes and stir-fry until the tomatoes are soft and mushy, then add 2 liters of filtered water and bring the broth to a boil.

    When the water in the pot is boiling vigorously, add a little seasoning, a little salt, then add the stir-fried bamboo shoots and snail meat, simmer over medium heat for about 5 – 7 minutes and taste again to adjust the seasoning before finishing.

    You place the noodles in a bowl and pour in the broth, then add the snails and bamboo shoots on top, sprinkle with a little chopped green onion, and it’s ready to enjoy.
