How to prepare Spicy Snail Noodles

Boil and extract snail meat
After soaking the apple snails in rice water (or water mixed with crushed chili) for about 5 hours to remove all dirt, rinse thoroughly with clean water, drain in a basket.
Place a pot on the stove, add snails, 5 lime leaves, 1 stalk of lemongrass sliced, 1 teaspoon of salt, pour enough water to cover the snails, stir well and cover the pot, boil until cooked.
Next, pour the snails into a basket, wait for them to cool a bit, then use a sharp toothpick to extract the snail meat.
How to properly clean snails:
- Method 1: When snails encounter metal, they will expel all the dirt, so soak the snails for at least 2 hours in water containing metal items like knives, forks,… and using a metal basin for soaking is the best.
- Method 2: Soak snails in rice water or cold water mixed with sliced chili for about 4 – 5 hours to clean them.
- Method 3: Mixing lemon, vinegar, and chili to soak the snails will also help them expel dirt very quickly.

Prepare other ingredients
The remaining lemongrass stalk should be cleaned and cut into diagonal pieces. Green onions, perilla leaves, and coriander should be washed and chopped finely. Pineapple should be peeled, cored, and cut into large pieces. The onion should be peeled and cut in half.
Fried tofu and pork belly should be washed and cut into bite-sized pieces.
Peeled 5 cloves of garlic and 2 shallots, then crush them. For 1 shallot, peel and chop it finely.

Cook the broth
Add 2 tablespoons of cooking oil to the pot, heat it up, then add smashed shallots, garlic, and lemongrass to fry until fragrant.
Next, add 1.5 liters of bone broth, half a chopped onion, pineapple cut into pieces, 3 tablespoons of satay chili, 1.5 tablespoons of fish sauce, 2 teaspoons of seasoning powder, 5 teaspoons of sugar, and 1/2 teaspoon of ground pepper, then stir all the ingredients together.
Once the broth boils, add the fried tofu, cook for another 3 – 5 minutes, then season to taste and turn off the heat.

Place a pan on the stove, add 1 tablespoon of cooking oil, then add minced shallots to fry until fragrant.
Next, add the pork belly and stir-fry until the meat is slightly browned, then add the snails to stir-fry together.
Season the pan with 1 teaspoon of seasoning powder, 1 tablespoon of fish sauce, and 1/2 teaspoon of ground pepper, continue to stir for about 2 minutes for the meat and snails to absorb the flavors, then turn off the heat.
