How to choose fresh ingredients

How to choose fresh pork ribs

  • Choose pieces of pork ribs that are light pink in color, and when pressed, they should have good elasticity.
  • Additionally, it’s best to select pieces with thick meat and little fat, as they will be tastier and more tender when fried, and less greasy.
  • For packaged and frozen pork ribs, make sure to carefully check the source and expiration date.
  • Avoid buying ribs that are discolored, have slimy meat, or an unpleasant smell.

How to choose fresh tomatoes

  • Choose tomatoes that are bright red and evenly colored, with taut, plump skin.
  • Opt for ripe tomatoes that have a natural fragrance.
  • Avoid buying tomatoes that are ripe but have no scent, as these may have been injected with ripening agents, which are not safe to consume, or those that are scratched or bruised.

How to choose fresh onions

  • Choose round onions with long roots, as these are the tastiest.
  • Good onions will have firm, smooth skin that is a beautiful yellow color, without dark spots, and closely hugging the bulb.
  • Avoid selecting misshapen onions or those that have completely lost their roots, as they will not taste good.

  • Make the tomato sauce

Heat a pan on the stove, add 1 tablespoon of cooking oil to the pan. When the oil is hot, add all the shallots and garlic and sauté until golden and fragrant.

When the shallots and garlic are fragrant, add all the tomatoes, stirring constantly over high heat for about 10 minutes until the tomatoes are soft and release their juices into a slightly thick sauce.

Prepare the sauce seasoning mixture by mixing 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1 tablespoon of sugar, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of pepper, and 1 tablespoon of sesame oil until the ingredients are well combined.

After 10 minutes, when the tomato sauce in the pan has thickened, add the above seasoning mixture, stir well, and cook for another 3 minutes for the tomatoes to absorb the seasoning.

Tip: Depending on your family’s taste and preference, you can adjust the seasoning to your liking.
