How to prepare Tomato Sauce Pork Chop

Prepare the pork chop
After buying, trim off excess fat from the pork chop, then soak in a basin with the juice of 1 lemon to eliminate the odor. After that, rinse with clean water and let it drain.
How to clean the pork chop effectively, without odor:
- Besides the method above, you can also use crushed ginger to rub on the pork chop and then rinse with clean water to effectively reduce the smell.
- Blanch the pork chop in boiling water for about 2 minutes, then take it out and rinse with cold water to eliminate the smell and remove any dirt stuck to the meat.

Marinate the pork
Mix the marinade ingredients including 1 tablespoon of fish sauce, 1 teaspoon of garlic powder, and 1 teaspoon of sugar.
Add the prepared pork chop along with the marinade mixture into a bowl, and mix well to ensure the pork absorbs the seasoning.

Prepare the other ingredients
Shallots and garlic are peeled, washed clean, and finely chopped.
Green onions and cilantro are trimmed, washed clean, drained, and cut into pieces about 1/2 finger length.

Make the tomato sauce
Heat a pan on the stove, add 1 tablespoon of cooking oil to the pan. When the oil is hot, add all the shallots and garlic and sauté until golden and fragrant.
When the shallots and garlic are fragrant, add all the tomatoes, stirring constantly over high heat for about 10 minutes until the tomatoes are soft and release their juices into a slightly thick sauce.
Prepare the sauce seasoning mixture by mixing 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1 tablespoon of sugar, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of pepper, and 1 tablespoon of sesame oil until the ingredients are well combined.
After 10 minutes, when the tomato sauce in the pan has thickened, add the above seasoning mixture, stir well, and cook for another 3 minutes for the tomatoes to absorb the seasoning.

Frying the ribs
Put another pan on the stove, add 1.5 tablespoons of cooking oil to the pan. Wait for the oil to heat up, then add the marinated ribs, frying over medium heat for about 10 minutes until one side is golden brown, then flip to the other side, frying for an additional 10 minutes until both sides of the ribs are cooked and golden.
Once the ribs are cooked, pour all the tomato sauce into the pan, add green onions and onions, then mix well. Adjust the seasoning to taste, turn off the heat, sprinkle cilantro and a little pepper on top, and serve on a plate to enjoy right away.
