How to choose fresh ingredients
How to choose fresh bone marrow
- You should choose bone marrow that is bright in color, not pale, has no strange smell, and is about 2 to 3 finger joints in size.
- Good bone marrow usually still has bright red meat firmly attached to the bone. Avoid choosing bones with tiny green spots like mold or meat that has turned brown or black.
- You should choose bone marrow with red marrow inside, and when holding the bone, it should not be slimy or watery.
How to choose delicious dried shrimp
- You should choose delicious dried shrimp such as sun-dried shrimp, which usually has a natural pinkish-red color like brick glaze, firm flesh, and no strong fishy smell.
- Avoid choosing shrimp that are pale or dark red as they are not sun-dried shrimp or have been dyed.
How to choose delicious dried squid
- You should choose dried squid that has a white belly, a pink back with faint black spots just like squid skin.
- Good dried squid usually has no fishy smell, feels dry to the touch, and the squid tentacles should be pinkish-white and tightly attached to the body.

Preparing the bone
After purchasing, clean the bones thoroughly with water.
Prepare a pot of water, add the bones along with 1/2 teaspoon of salt, then cook on high heat until the water boils, then turn off the stove.
Next, remove the bones, discard the boiling water, and wash the bones again with clean water.
Effective way to eliminate the smell of pork bones- Besides blanching the bones in boiling water to remove the smell as TasteVN has instructed, you can use lemon, vinegar with salt, or ginger to rub on the bones and let it sit for 5 – 10 minutes, then rinse with water.
- Alternatively, you can also add a little white alcohol to the water when blanching the bones, as alcohol can effectively eliminate odors.

Prepare other ingredients
Soak dried shrimp and dried squid briefly in clean water to remove dirt.
Peel the white radish, cut off the stem, then wash it clean, and cut it in half with a knife.
Peel the onion, wash it clean with water, and then cut the onion into quarters. Peel the shallots, wash them clean, and slice them thinly.
Peel the garlic, wash it clean, then put it in a blender and grind it finely. Wash the green onions and cilantro, then chop them small.
Tip: If you don’t grind the garlic, you can also use a knife to chop it finely. -
Fry the garlic
Place a pan on the stove, add 4 tablespoons of cooking oil and heat it up, then add the garlic, stir well and fry until golden and fragrant, then remove to a bowl.
Note: When the garlic is just golden, you should remove it immediately to avoid it turning brown and bitter. -
Sauté minced meat
Add 1 tablespoon of garlic oil to the pan, once hot, add shallots and stir until fragrant and slightly golden.
Then, add 300g of minced meat, season with 1 teaspoon of seasoning, 1 teaspoon of sugar, and 1/2 teaspoon of fish sauce, and sauté the minced meat over medium heat until cooked.
After the minced meat is cooked, add 1/2 teaspoon of ground pepper, stir well, and then turn off the heat.

Cooking the broth
Place a pot on the stove, add the beef bones along with 3.5 liters of water. Next, add the white radish, onion, dried shrimp, and dried squid.
Then, season with 2 teaspoons of salt, 1 tablespoon of rock sugar. After that, cook on medium heat until the water boils, then add 2 teaspoons of seasoning powder.
Once the broth is boiling, reduce the heat and simmer for 2 hours.
After simmering the broth for 2 hours, add 1 tablespoon of seasoning powder, 1 tablespoon of rock sugar, 1/2 teaspoon of salt, and 1/3 teaspoon of monosodium glutamate, stirring well to dissolve the seasonings completely.
Note:- To make the broth clearer, you should regularly skim off the foam.

Blanching the noodles and completing
Boil a pot of water, then blanch the noodles in hot water until you feel they are soft, then take them out.
Put the noodles in a bowl, add minced meat, green onions, cilantro, and a bit of fried garlic on top. Then pour the broth over it, and you have completed a delicious and appealing bowl of noodles.
How to blanch noodles to be chewy and not mushy- When the water is boiling, drop in a sufficient amount of dry noodles for eating and let it sit.
- When you see the noodles floating to the top, use chopsticks to stir evenly and you can take them out; blanching for about 1 minute is enough.
- To keep the noodles chewy and not mushy, you can put the blanched noodles in a basin of cold water (add a few ice cubes) and let them sit for about 2 minutes before taking them out.
