For straw mushrooms, clean the stems, then soak them in salt water or rice wash for about 10 minutes, then remove and rinse well, and drain. Use a knife to cut the mushrooms in half or quarters depending on their size.

Fried tofu, when bought, you rinse it briefly with water and then use a knife to cut it into small, bite-sized pieces.
Shallots are peeled clean, take about 4 – 5 large bulbs and slice them, the remaining part is crushed and minced.
Peel the cassava, wash it clean, and then cut it into strips.
Peel the carrot, wash it clean with water. Take 1 carrot to carve into flowers and then cut it into thin slices, the remaining carrot is cut in half to be used for making the broth.
Accompanying vegetables such as culantro, cilantro, chives, basil, and mung bean sprouts should be soaked in diluted salt water for about 10 minutes, then rinsed and drained.

Cook the vegetable broth
Place a pot on the stove, add about 1.5 – 2 liters of water, and bring it to a boil.

Add 1/2 tablespoon of vegetarian seasoning, 1 tablespoon of soy sauce, 1/2 tablespoon of sugar, and 1 tablespoon of curry powder to the pan, then stir well and continue to stir-fry for another 2 minutes to let the ingredients absorb the seasoning.
Tip: When adding the tofu to the pan, be sure to stir gently to avoid breaking the tofu.

Add 1 piece of rock sugar (about 5g) to the pot of vegetable broth, then pour in the sautéed mushrooms and tofu. Turn on medium heat and bring the water in the pot to a boil.
