How to make Baked Fresh Milk Flan

  • Caramelizing sugar

    Place a pan on the stove, add 40g of sugar and 20ml of water, then cook over medium heat until the sugar boils and turns a brown color.

    Next, add 20ml of plain water, stir well once more, and then turn off the heat. After that, pour the caramel into each flan mold.

  • Mixing the egg and milk mixture

    Place a new pot on the stove, add 300ml of unsweetened fresh milk, 40g of sugar, and 1 teaspoon of vanilla powder, then heat over medium heat until the milk is warm and the sugar dissolves, then turn off the heat.

    Beat 3 eggs, then slowly pour them into the warm milk mixture. Stir while pouring to combine well.

    Next, strain the egg and milk mixture through a sieve to remove any residue, then let the mixture rest for 10 minutes.

    Preheat the oven to 175 degrees Celsius for 10 minutes. Pour the egg and milk mixture into the prepared caramel mold. Next, use a toothpick to poke out any bubbles that appear on the surface of the mixture, then tightly cover the mold with aluminum foil.

    Finally, pour boiling water into the tray, enough to submerge about 1/2 the height of the tray, and bake at 175 degrees Celsius for 40 minutes.

    Put a pan on the stove, add 100gr of sugar and cook on low heat until the sugar melts and turns a brown color.

    Next, pour the caramel into the mold and let it cool.

Tips for successfully making baked flan

  • When beating the egg and milk mixture, you should not beat too vigorously to avoid creating air bubbles.
  • You should only stir the mixture in one direction and strain it a few times before steaming.
  • Do not steam the cake at too high a temperature, as this will cause the egg and milk mixture to boil and become pockmarked.
  • If steaming the cake using a steamer, you should use a towel that absorbs water well, cover the pot’s mouth, and then put the lid on. Every 15 minutes, open the lid once and wipe away the steam.
  • If baking the cake in an oven, you should preheat it at 150 – 160 degrees Celsius for 15 minutes. Line a cloth in the baking tray before placing the cake mold in it. Then pour boiling water to cover about half of the mold before baking.
