Beef 2.6 kg Mung beans 150 gr Rice 200 gr Peanuts 300 gr Cassava 1.5 kg Turmeric 200 gr Ginger 100 gr Papaya 1 fruit (1kg) Water spinach 300 gr Seasoning greens a little (green onions/ Vietnamese coriander) Minced garlic 1/2 tablespoon Minced onion 1/2 tablespoon Salt 50 gr Common spices a little (seasoning powder/ sugar/ salt/ monosodium glutamate)

  • When buying, choose pieces of beef shank that have a bright pink color, with cuts showing natural, bright, and dry colors.
  • When buying, prefer the shanks from the front legs, as the front legs of the cow are more active, making the meat and tendons firmer and crunchier.
  • Avoid buying shanks that have an unnatural meat color, are slimy on the outer membrane, or have unusual spots inside the meat.

How to choose fresh carrots

  • You should choose carrots that have a bright orange color, with a smooth and shiny surface.
  • Prioritize choosing carrots with fresh tops that are tightly attached to the body of the carrot, feeling heavy and firm when held.
  • Avoid choosing carrots that are bruised, have a withered surface, are wrinkled, and have many unusual black spots.

How to cook Beef Congee

  • Prepare the ingredients

    After purchasing, you should briefly scorch the skin of the beef and cut it into bite-sized pieces. Next, wash it clean and let it drain.

    Peel the papaya, remove the seeds, and cut it into bite-sized pieces. For fresh turmeric, peel it, wash it clean, and then cut it into pieces.

  • Stir-fried beef

    Place a pot on the stove, wait for it to heat up, then add 1 tablespoon of cooking oil along with the minced onion and garlic mixture, sauté until fragrant, then add the beef, stir well, cover, and cook for about 15 minutes.

  • Stew beef with ingredients

    After 15 minutes, the beef is nearly cooked, then add 300g of peanuts, chopped papaya, fresh turmeric, 50g of salt, 1 tablespoon of seasoning powder, 1 tablespoon of monosodium glutamate, and 4 liters of water.

    Use a ladle to stir well and cook on low heat for about 2.5 hours.

  • Boil cassava

    Pe the cassava, wash it clean, then place it in a pot containing about 1.5 liters of water, add 1 teaspoon of salt, adjust to low heat, and boil for about 20 minutes.

    After cooking for 2.5 hours and letting it cool for about 3 hours, the beef is soft; carefully remove each piece of beef and set the papaya aside.

    Filter out the bones and tendons from the beef, and cut the meat into bite-sized pieces.

    After removing the beef and papaya, add the washed rice and mung beans, plus another 2 liters of water, adjust to medium heat, and cook for about 1 hour until the porridge is done!

    After cooking for 1 hour, the rice and mung beans are cooked and expanded evenly, slowly add the beef and papaya, and add another 1 liter of water.

    Add to the pot of porridge 1 tablespoon of seasoning, 1 tablespoon of monosodium glutamate, 1.5 teaspoons of sugar, stir well and cook for another 5 minutes, then taste to adjust to your liking.
