How to choose fresh ingredients
How to choose fresh beef shank
- When buying, choose pieces of beef shank that have a bright pink color, with cuts showing natural, bright, and dry colors.
- When buying, prefer the shanks from the front legs, as the front legs of the cow are more active, making the meat and tendons firmer and crunchier.
- Avoid buying shanks that have an unnatural meat color, are slimy on the outer membrane, or have unusual spots inside the meat.
How to choose fresh carrots
- You should choose carrots that have a bright orange color, with a smooth and shiny surface.
- Prioritize choosing carrots with fresh tops that are tightly attached to the body of the carrot, feeling heavy and firm when held.
- Avoid choosing carrots that are bruised, have a withered surface, are wrinkled, and have many unusual black spots.
How to choose good quality mung beans
- You should choose mung beans that are green, with a smooth and fresh surface.
- Prioritize beans that are oval-shaped, with both ends more pointed than round; avoid buying beans that are unevenly shaped as they are likely to be less tasty.
- In particular, avoid buying beans that have mold, uneven coloring, and have an unpleasant odor when smelled.
How to choose good cassava, not fibrous
- Good cassava roots are usually round and elongated, with a smooth skin that tends to be softer and sweeter.
- You can also check by lightly scraping the thin skin with your finger; if the inside skin is light pink, it’s a good choice because the pink skin contains fewer toxins than the white skin.
- Avoid buying roots that have been stored for too long and are dry because they usually do not taste good and are not healthy.
How to choose good peanuts
- Good peanuts are usually large and round, and feel firm and bouncy when squeezed.
- The outer shell is uniformly colored, shiny, smooth, and dry.
- Do not choose peanuts that have a strange smell or have a surface that is moldy with black spots.
