How to make Vegetarian Green Bean Sausage

Prepare the ingredients
- Wash the green beans thoroughly, then soak them until soft for about 4 hours.
- Soak the shiitake mushrooms in cold water until soft, then wash and chop them finely.
- Wash the Vietnamese coriander, then slice it into thin strips.
- For the banana leaves, use a cloth to dampen them, then wipe them clean. After that, briefly boil the banana leaves until soft.

Steam the green beans
Place the green beans in a steamer and steam for about 20 minutes until cooked.

Pound the green beans
When the beans are cooked, take them out and place them in a mortar to pound until smooth. After pounding, transfer the green beans to a bowl.

Wrapping the sausage
- Add the shiitake mushrooms, Vietnamese coriander leaves, and the mashed mung beans and mix well.
- Next, add 1 tablespoon of tapioca starch and continue to mix evenly. Add 1/2 teaspoon of salt, 1 teaspoon of sugar, and mix again.
- Brush a little cooking oil on the banana leaves to prevent sticking. Place the filling and roll it round. You should stack 3 pieces of banana leaves on top of each other before wrapping.
- Then, fold the ends of the banana leaves on both sides and tie them tightly with string.
- Since mung beans are very difficult to wrap, unlike raw sausage, it is necessary to wrap with a layer of aluminum foil on the outside to shape it, while the sausage still retains the fragrance of banana leaves.

Steaming the sausage
Place the wrapped vegetarian sausage into the steamer and steam for about 30 minutes to cook the sausage.
