How to make Brown Sugar Pearls

  • Mixing and kneading the dough

    Pour 150g of tapioca flour, 10g of rice flour, 5g of cocoa powder, and 30g of brown sugar into a bowl and use a whisk to mix the ingredients thoroughly.

    Next, pour in 120ml of boiling water and continue to stir well. After about 5 minutes, the dough for the pearls will gradually stick together.

    Then, pour the entire dough onto a table. Divide the dough into 4 parts and shape each part into long cylinders with a diameter of about 1 cm. After that, cut them into small pieces about 1/2 finger length and shape each piece into a round ball.

    Dust a thin layer of tapioca flour on the surface to prevent the pearls from sticking together. After finishing all the pearls, pour them into a sieve to remove the excess flour.

  • Making black sugar pearls

    Put a pot on the stove, pour in 500ml of water, wait for the water to boil, add all the pearls, adjust to medium heat, and cook for 25 minutes.

    After 25 minutes, turn off the heat, take the pearls out, and soak them in cold water immediately. After 2 minutes, take them out to drain.

    Continue to put a pan on the stove, add 70g of brown sugar and 50ml of water, and bring this mixture to a boil. While waiting for this mixture to boil, use a spoon to stir well so that the brown sugar completely dissolves in the water.

    After 5 minutes, add the pearls and cook for about 7 more minutes. Stir continuously to ensure the pearls cook evenly and do not burn.

    Once the pearls are cooked and the black sugar starts to caramelize, turn off the heat and let it cool for 30 minutes.

  • Cook the milk tea mixture

    Place a pot on the stove with 350ml of whipping cream and stir until the mixture is warm but not boiling, then turn off the heat.

    Add 10gr of black tea, stir well, and steep for about 15 minutes.

    Then filter out the tea residue and place the mixture in the refrigerator for about 6 hours.

  • Whipping the milk tea cream

    After cooling, put the milk tea cream into a bowl and use a hand mixer to whip the cream until it doubles in volume and becomes smooth.

    Next, add 80g of condensed milk to the cream and continue using the hand mixer to whip until the cream is firm and creates clear peaks.

    Prepare the ice cream molds and drizzle a little black sugar syrup around the edges of the molds.

    Next, pour the whipped milk tea cream into the molds until they are half full, then add a little black sugar pearls. Remember to use a spoon to distribute the pearls evenly around the ice cream molds.

    Continue similarly with the remaining 3 ice cream molds. After that, cover the tops of the molds with aluminum foil and insert popsicle sticks into the center of the molds.

    Finally, place the ice cream in the freezer for about 8 hours until it hardens, and then you can take it out to enjoy.
