How to choose fresh pork

  • About color: Good pork will be light pink or light red, with the fat being translucent white with a slight ivory hue. Avoid choosing parts of meat that have unusual colors, pale colors, or very dark colors.
  • About smell: Good meat will have a distinctive aroma that is not unpleasant, with no fishy or pungent odor.
  • About elasticity: Press the piece of meat with your hand; if it is springy, firm, not too hard or mushy, and no slimy liquid comes out, then it can be chosen.
  • About fat and skin: Choose pieces of pork with a distinct meat structure, with fat that is tightly attached, but should be difficult to separate when touched.

How to choose and buy delicious, quality sour vegetables (fermented vegetables)

  • Delicious sour vegetables have a natural fermented smell, and the leaves maintain a beautiful greenish-yellow color.
  • When tasting (if possible), the cabbage should be crunchy and have a mild sour taste.
  • Choose cabbage bundles with large leaf stems, free from pests or bruising, with no strange odors, and the pickling brine should be clear, without mold.
  • Avoid selecting cabbages that are wilted, dark yellow, or overly green.
  • It is advisable to buy from reputable stores with packaging to ensure shelf life and the source of the pickled vegetables.
  • Additionally, to ensure the quality of pickled vegetables, you can make sour vegetables at home with a simple recipe shared by TasteVN.

Tips to prepare pork without a foul smell:
    • Method 1: Blanch the pork in boiling water for about 3 minutes, then rinse the meat with cold water.
    • Method 2: Wash the pork with water, then soak it in alcohol for about 15 minutes, and rinse it again with water.

  • Prepare the pickled mustard greens

After buying, wash the pickled mustard greens thoroughly with water and squeeze dry 3 – 4 times to reduce the saltiness and sourness, then let them drain.

Once the pickled mustard greens are mostly dry, cut them into small, bite-sized pieces.

Tip: To ensure that the pickled mustard greens are crispy and flavorful without being too salty or sour when stir-frying, make sure to squeeze them very well during the final rinse to remove as much water as possible!
