  • Chicken intestines are often sold widely in many places, so to ensure you buy good quality ones, you should choose reputable addresses to guarantee quality; freshly slaughtered chicken intestines are the best when cooked.
  • When buying chicken intestines, you need to observe the color; fresh chicken intestines will have a pinkish-red color and should not smell bad; the liver should not have a dark or pale color.
  • Good chicken intestines will not have an unpleasant odor, no dark colors, and especially should not be slimy.
  • Use your hand to touch the parts; if you feel elasticity and no slimy texture, then it is good intestines.

How to choose fresh pickled mustard greens

  • Choose pickled mustard greens that have a natural yellow color, not too bruised, with smooth leaves, not torn or patchy.

  • Prepare chicken intestines and ingredients

    Ask your butcher to clean 2 sets of chicken intestines to remove the dirt inside. Once bought, wash the chicken intestines with salt water and then rinse them again with clean water.

    Cut the chicken intestines into bite-sized pieces.

    To reduce the fishy odor, crush and finely chop some ginger. Then prepare a pot of boiling water, add the chopped ginger, and briefly boil the chicken intestines for about 3 – 4 minutes.

    How to clean chicken intestines to remove slime and odor:
    • Method 1: Wash the chicken intestines with clean water, then add salt and massage for about 3 minutes before rinsing thoroughly.
    • Method 2: Use a mixture of vinegar and salt, rub evenly, and massage for 2 minutes to help clean the chicken intestines and eliminate odors.
    • Method 3: Blanch the chicken intestines in boiling water with ginger, salt, and white wine for about 2 minutes, then remove and rinse with water.

    Sour mustard greens should be rinsed once with water to reduce sourness and bitterness. Finely chop coriander and green onions.

    Add chopped green onions and coriander, stir-fry for 1 minute, then adjust the seasoning to suit your family’s taste, and it’s done.
