How to choose good salted eggs
- Choose eggs with intact shells, without cracks or mold spots.
- You can shine a light through the egg under a lamp or sunlight. If the egg white is clear and the yolk is small and close to the shell, it indicates good quality.
- When cracking the egg, if you find that the egg white is cloudy, the yolk is thin, and has a foul smell, you should discard that egg.

How to make Salted Egg Nougat Cake with Pork Floss

Prepare salted eggs
First, wash the salted eggs with alcohol to eliminate the fishy smell, then rinse them with water.
Next, steam the salted eggs for 15 – 20 minutes and then mash them finely with a fork.
Place a pan on the stove, melt 50g of unsalted butter over low heat. Then, add the salted eggs and stir well to combine.

Melting marshmallow
Put 180g of marshmallow into a pan and stir continuously until completely melted.
Next, add 50g of powdered milk and continue stirring until well combined.
Note: Stir continuously to avoid burning the candy. -
Continue to add 150g of crushed cookies to the pan, mixing until the cookies are evenly coated with the candy mixture and everything is well combined.
Next, pour the mixed mixture into a mold lined with parchment paper. Use a pressing tool to shape it into a rectangular block.
