Prepare the ingredients
For the nuts, you put them in a pan and roast over low heat for 7 – 10 minutes, then pour them onto a plate to cool completely.
Tip: If you use a oven, spread the nuts evenly on a baking tray lined with parchment paper, bake for 7 – 10 minutes at 170 degrees Celsius, take the nuts out and let them cool completely. As for dried fruits, including raisins, dried blueberries, and dried apricots, you should soak them in a bowl of warm water (about 60 degrees Celsius) for 10 minutes until they soften, then drain them in a colander, spread the fruits on a tray, and pat them dry with paper towels to remove excess water.

Making Green Tea Nougat
Place a pan on the stove, add 40g of vegetable butter, and stir gently until the butter completely melts over low heat. Next, add 120g of marshmallow candy, stirring continuously until the candy is fully melted.
Once the marshmallow candy has melted, add 80g of full cream milk powder and 5g of green tea powder, stirring well to combine the ingredients.
Tip:
- You must keep the heat on the lowest setting and stir continuously to prevent the marshmallow from burning and separating from the butter. It’s best to use a flat silicone spatula to avoid burning your hands.
- You should not reduce the amount of milk powder because if the milk powder is too little, the candy will separate from the butter during storage.
- If you like the chocolate flavor, you can simply replace the green tea powder with cocoa powder.
Next, add all the nuts and dried fruits, stirring well. When the candy forms a solid mass and no longer sticks to the bottom of the pan, turn off the heat.

Make chocolate nougat
Similar to the method of making green tea nougat in step 2.
Prepare another pan, using the same ingredient measurements and order as above. When it’s time to add the green tea powder, just replace it with cocoa powder.
-
Completion
Quickly pour the nougat candy mixture onto a sheet of parchment paper, place the remaining parchment paper on top and use a rolling pin to roll it to your desired thickness. Gently peel back the top sheet of parchment, use a knife to trim the candy into a better shape if it’s not pretty.
Finally, sprinkle the dried rose buds evenly on the candy surface and press lightly to make the petals stick to the candy.
Let the candy cool completely for 5 – 6 hours at room temperature or 3 – 4 hours in the refrigerator.
Then, use a knife to cut the candy into bite-sized pieces; you can enjoy it right away or wrap it in rice paper and then place it in a sealed plastic bag for later use.
-
Final Product
The green tea nougat candy is soft and chewy, with a moderate sweetness, fragrant with green tea aroma, crunchy delicious nuts, and sweet chewy dried fruits, blending together in a delightful taste!
Tips for Successful Execution
- You should choose to buy soft marshmallow candies that are not coated with sugar so that the candy melts quickly without becoming hard when cooked under heat.
- The essential ingredients that cannot be replaced in the Nougat candy recipe are marshmallow, whole milk powder, and unsalted butter.
- It is advisable to buy unsalted butter that is white in color as it will help the candy remain white and have a richer aroma; do not use margarine to avoid changing the flavor and making it less tasty.
- You can combine it with various jams such as orange jam, grape jam, grapefruit jam, etc., to diversify the flavors of the candy.
- It is recommended to use an amount of nuts and jam equivalent to the ratio of milk powder and butter to help balance the candy’s taste, avoiding making it too sweet or too greasy.
- You can easily find the above ingredients at stores selling baking supplies, supermarkets, traditional markets, or order from reputable e-commerce platforms.
How to Preserve Nougat Candy
- Use rice paper to wrap the candy and place the candy in individual nylon bags, using a bag sealing machine or hair dryer to seal the candy bags tightly.
- You can also place the candy in a glass jar with a tight lid for storage; the candy may stick together when taken out for use if stored this way.
- Green tea nougat can be kept for 1 month at room temperature and about 2 months in the refrigerator.
