1. Coconut milk coffee nougat

Coconut milk coffee nougat
  • Preparation

Ingredients for Coconut milk coffee nougat Serves 4 people

Peanut butter 50 gr Coconut milk cream 50 gr Marshmallow candy 300 gr Coconut powder 250 gr Black coffee powder 5 gr Almonds 120 gr Macadamia nuts 60 gr Dried young coconut 50 gr Biscuits 100 gr

For coconut milk cream, you can buy the canned coconut milk available at TasteVN supermarkets nationwide or purchase online at the e-commerce site bachhoaxanh.com, then freeze by keeping it cool in the refrigerator for about 2 – 3 hours, the coconut milk will solidify and turn into coconut milk cream.

Ingredients for 2 methods of making nougat candy

Tools needed

Pan, square mold, flat whisk, bowl, knife, container tray, parchment paper.

How to make Coconut Milk Coffee Nougat Candy

  • Melt the marshmallows

    Start melting the marshmallows by adding 50g of peanut butter and 50g of coconut cream into a pan, place the pan on the stove and turn on low heat. Stir gently while heating until both are melted into a homogeneous mixture.

    Add 300g of marshmallow candy into the above mixture, continue to stir evenly over low heat until the candy is completely melted, temporarily turn off the heat, and leave the candy mixture on the stove to prepare for mixing with the coconut powder.

    Tip: While melting the marshmallows, remember to stir continuously and evenly to avoid burning the candy and sticking to the pan.

  • Mixing the Candy Mixture

    Put 250g of coconut base powder and 5g of coffee powder into a bowl, mix the two types of powder evenly together.

    Turn the stove back on to a low heat, gradually pour in the powder while continuously stirring with a flat whisk.

    Tip: You should divide the bowl of powder into 3 portions to pour into the pan, adding one portion at a time, stirring until the powder is evenly soaked into the candy before adding the next portion, and so on until all the powder is used.

    Continue to stir on low heat until the powder and candy blend into a thick and smooth mixture.

    Gradually add 120g of almonds along with 60g of macadamia nuts and 50g of dried young coconut into the pan, stir evenly on low heat, and when all the ingredients are mixed together, turn off the heat.

    Tip: Remember to set aside a little macadamia nuts, almonds, and dried young coconut for decoration on top of the candy to make it look more appealing!

  • Pouring and hardening the candy

    Prepare a square or rectangular mold, place a layer of paper underneath the mold for easy removal of the candy, pour 1/2 of the candy from the pan into it. Use your hands to spread the candy evenly over the surface of the mold.

    Note: While the candy is still hot, you must quickly shape it; if the candy cools down, it will harden and cannot be shaped.

    Arrange each cookie evenly on the surface of the candy, press lightly to make the layers of candy and cookies stick together, continue adding the remaining 1/2 of the candy on top of the cookies, use your hands to spread it evenly and press the layer of candy tightly.

    Tip: You can place the cookies in between or not at all! If you choose not to use cookies, just pour all the candy into the mold and shape it similarly.

    Gradually arrange all the remaining nuts, dried coconut, and cookies on top of the candy.

    Note: Throughout the process of layering the candy and cookies up to the layer of nuts on top, don’t forget to apply a moderate pressure downwards, ensuring that the candy will not fall apart when cut!

    Finally, cover the top surface of the candy with a layer of paper. Use a flat surface like a cutting board or tray to gently press down on the candy to make the surface smooth and even.

    Now just wrap the candy tightly, place it in the refrigerator for 5 – 6 hours to let the candy harden.

    Once the candy has hardened, take it out and remove it from the mold. Use a knife to cut the candy into square pieces as shown in the picture. And that’s it, the delicious candy is ready.

How to make Strawberry Nougat

  • Melting marshmallow

    Put 250g of milk powder and 10g of strawberry powder into a bowl, using a whisk to mix the two types of powder together.

    Turn on the stove to low heat, slowly pour the powder in, while pouring, use a flat whisk to stir consistently.

    Tip: You should divide the bowl of powder into 3 portions to pour into the pan, add one portion to the pan, and stir until the powder is absorbed into the candy before adding the next portion, and so on until all the powder is used.

    Continue to stir evenly over low heat until the powder and candy blend into a thick and smooth mixture.

    Gradually add the pistachios along with the dried strawberries and kiwis to the pan, stir evenly over low heat, and when you see that all the ingredients are mixed together, turn off the heat.

    Tip: Remember to reserve a bit of nuts and dried fruits to decorate the top of the candy to make it look more appealing!

    Prepare a square or rectangular mold, place a layer of oil-absorbing paper or a thin plastic layer underneath the mold for easy removal of the candy, pour in half of the candy from the pan. Use your hands to spread the candy evenly over the surface of the mold.

    Note: While the candy is still hot, you must work quickly to shape it; if you let the candy cool, it will harden and cannot be shaped.

    Arrange each cookie evenly on the surface of the candy, pressing lightly so the layers of candy and cookies stick together, then add the remaining half of the candy on top of the cookies, using your hands to spread and press the candy firmly.

    Tip: You can put cookies in between or not at all! If you don’t add cookies, just pour all the candy into the mold and shape it similarly.

    Gradually arrange all the chestnuts and dried fruits along with the remaining cookies on the surface of the candy.

    Note: Throughout the process of layering the candy interspersed with cookies until the layer of nuts on top, don’t forget to press down with moderate force, ensuring that the candy will not come apart when cut!

    Finally, cover the top of the candy with a layer of plastic. Use a flat surface like a cutting board or tray to press lightly on the candy to make the surface even.

    Now just wrap the candy tightly and place it in the refrigerator for 5 – 6 hours to let the candy harden.

    Once the candy has set, remove it from the mold. Use a knife to cut the candy into bite-sized square pieces.

    The candy has a beautiful milky pink color, interspersed with layers of cookies and the creamy, rich taste of pistachios, while the bright red of the strawberries further highlights the green of the dried kiwi.
