How to choose fresh ingredients
How to choose fresh quality pumpkin
- Choose pumpkins with a green, yellow-orange, or bright color, and when pressed, they feel firm.
- Additionally, you should choose those with intact stems, about the length of one finger, and the stem still has a bit of resin because these are freshly harvested pumpkins.
- Avoid choosing pumpkins with bruised, damaged skin, chipped or with many dark spots, as they will not be safe to eat.
How to choose quality lotus seeds
- For fresh lotus seeds: You should choose mature lotus seeds that are off-white or dark yellow in color, with a firm and round outer layer, as these seeds will be very fragrant and not chewy when eaten.
- For dried lotus seeds: Choose dried lotus seeds that are opaque white, small and uniform in size, intact, and not crushed.
- To purchase quality lotus seeds and ensure safety, you should buy them at reputable stores, supermarkets, or large markets. When buying, remember to check the packaging and expiration date carefully!

How to make Pumpkin Lotus Seed Milk
-
Prepare the ingredients
Peel the tough outer skin of the pumpkin, remove all the fibrous insides, and retain only the flesh. Then, cut the pumpkin into pieces about 2 finger lengths, wash them thoroughly with water, and let them drain.
To soften the lotus seeds, soak them in hot water for about 30 minutes before cooking. When the seeds are soft, use a knife to split them in half to remove the core.

Cook pumpkin seed milk
Place a pot on the stove, add 500ml of filtered water into the pot, then drop the pumpkin and lotus seeds in to cook over high heat. Wait for the water to boil, then reduce the heat and simmer for about 30 minutes until the pumpkin and lotus seeds are soft, then turn off the heat.
Add the cooked pumpkin and lotus seeds along with 2 cups of filtered water (rice bowl) into a blender, turn it on to medium and blend until smooth for about 2 – 3 minutes.
Stir the mixture in the blender and continue to blend 1 – 2 more times. Pour the blended mixture through a sieve to filter out the residue.
Next, pour the filtered mixture into a large glass and add 2 tablespoons of condensed milk, stir well for about 2 minutes to complete.
Tip: You can adjust the thickness or thinness of the milk to your liking by adding more or less water! -

Pumpkin and lotus seed milk is a nutritious drink. The sweet taste of the condensed milk combined with the distinctive aroma of pumpkin and lotus seeds creates a delicious flavor that is hard to resist.
