What is cocoa powder?

  • Cocoa powder is usually produced by grinding cocoa beans, which are typically dark brown in color.

  • The first sign to distinguish between cocoa powder and chocolate powder is color. Cocoa powder typically has a slightly dark brown color, while chocolate powder can come in various colors depending on whether it is dark, white, or brown chocolate.
  • At the same time, you can taste to differentiate; cocoa powder stands out with a mild bitter and slightly sour taste, while chocolate powder usually has a dominant sweet flavor, mixed with a very slight bitterness.

How to make Black Sugar Pearls

  • Mixing and kneading the dough

    Pour 150g of tapioca flour, 10g of rice flour, 5g of cocoa powder, and 30g of brown sugar into a bowl and use a whisk to mix the ingredients evenly.

    Next, add 120ml of boiling water and continue to stir well. After about 5 minutes, the pearl dough will gradually become sticky.

    Then, pour the entire dough onto a table. Divide the dough into 4 parts and roll each part into a long cylinder with a diameter of about 1 cm. After that, cut into small pieces about 1/2 finger length and roll each piece into a ball.

    Dust a thin layer of tapioca flour over the surface to prevent the pearls from sticking together. Once you have finished making all the pearls, pour them into a sieve to remove the excess tapioca flour.

  • Making black sugar pearls

    Place a pot on the stove, pour in 500ml of water, wait for the water to boil, add all the tapioca pearls, adjust to medium heat and cook for 25 minutes.

    After 25 minutes, turn off the heat, remove the pearls and soak them in cold water immediately. After 2 minutes, take them out to drain.

    Continue by placing a pan on the stove, add 70g of brown sugar and 50ml of water, bring this mixture to a boil. While waiting for this mixture to boil, use a spoon to stir evenly until the brown sugar completely dissolves in the water.

    After 5 minutes, add the pearls and cook for about 7 more minutes. Stir continuously to ensure the pearls cook evenly and do not burn.

    Once the pearls are cooked and the black sugar starts to caramelize, turn off the heat and let it cool for 30 minutes.

How to make Red Bean Cashew Milk with Black Sugar Pearls

  • Soak red beans and cashews

    Put 250g of red beans into a bowl, remove any damaged beans, pour about 500ml of water in, and soak the red beans overnight. Then, use a strainer to drain the red beans and set them aside to dry.

    Next, add 250g of cashews into a bowl, pour in about 500ml of water, and soak for about 4 hours. After 4 hours, drain the cashews in a colander.

  • Cook red beans

    After the red beans are drained, pour them into a pot, add about 700ml of water, adjust to low heat, and simmer for about 2 hours.

    After 2 hours, the red beans will have absorbed some water and become soft; add about 200g of brown sugar, stir really well until the sugar dissolves and absorbs into the beans. At this point, put the red beans in the refrigerator to cool.

    In this step, you add 250g of cashews, 1 liter of water, 1 tablespoon of vanilla extract, and about 100g of cooked red beans into the blender and blend until smooth.
