  • You should choose carrots that are bright, deep orange, of moderate size, slightly firm, and feel solid in hand.
  • If the carrot is too large, with thick leaves and stems at the base and shoulders, it should not be chosen as these are older carrots, which will have more fibers and less nutrients.
  • If you press it and it feels soft, has bruises, or the stem is wilted, do not buy it under any circumstances.

  • Prepare and marinate the pork leg

    Wash the pork leg with diluted salt water and rinse thoroughly with clean water.

    To remove the odor, place the pork leg in a pot with 1 liter of water and 1 sliced ginger, boil for about 1 minute, then take out the pork leg and rinse it clean.

    Tips to remove the odor from pork leg:

    • Method 1: Clean the pork leg, blanch it in boiling water for about 2 – 3 minutes, then take it out and rinse it again with water.
    • Method 2: Dissolve salt in water and soak the pork leg for 25 – 30 minutes, then rinse it clean with water.
    • Method 3: Boil the meat for about 2 – 3 minutes, adding 3 – 5 stalks of straw while blanching.

    Marinate the pork leg with 1 spoon of minced red onion, 1 spoon of seasoning powder, 1/2 spoon of salt, and 1/4 spoon of monosodium glutamate. Let it marinate for about 30 minutes for the pork leg to absorb the spices.
