How to make Red Bean Milk

Prepare the beans
Soak 300g of red beans in warm water for about 8 hours, or you can soak them overnight to save time for cooking red bean milk the next day.
After soaking, rinse the red beans with water, remove any spoiled beans, and rinse 2-3 more times until clean, then drain.

Cook and blend the beans
Place a pot on the stove, add the red beans, and pour in enough water to cover the beans by about one finger’s width. Then, turn on the stove to high heat to bring the water to a boil.
Once the water starts boiling, reduce the heat to low, cover the pot, and cook for about 15-20 minutes until the beans are soft and the water has reduced.
Next, pour all the water and the red beans into the blender. Turn on the blender at high speed to puree the beans.

Strain through red bean water
Next, strain the red beans to remove the skins, extracting the red bean juice.
Add about 1 – 2 tablespoons of water to dilute the remaining red bean mixture in the strainer, then strain about 2 – 3 more times to remove the skins more thoroughly.

Cook the milk
Pour the strained red bean juice into a pot, place the pot on the stove, and heat over medium heat.
While heating the red bean juice, add about 2 tablespoons of sugar to the pot, stirring well until the sugar dissolves, and skim off any white foam so that the finished milk will be clearer.
When you see the bean water starting to boil, reduce the heat and add about 220ml of fresh milk to the pot, stir well, then turn off the heat.
Tip: To prevent the milk from clumping, you should stir continuously while cooking the milk.
