How to choose fresh soybeans

  • Choose soybeans that are off-white, evenly colored, and have a shiny skin. Additionally, good beans will have a similar size, be firm, not mushy, not crumbly, and not soft.
  • Choose beans that have a light, pleasant aroma, with a rich smell.
  • If possible, prioritize buying beans after the soybean harvest or 3 – 4 months after the harvest to choose fresh, good soybeans.
  • Avoid choosing beans that show signs of cracking, sprouting, being eaten by pests, or having a musty smell.

How to choose fresh pandan leaves

  • When buying pandan leaves, choose medium-aged leaves, meaning they are neither too old nor too young. Choose deep green, dark, and smooth leaves.
  • Choose pandan leaves that are intact, not broken or bruised.

How to make pandan leaf soybean milk

  • Soak the soybeans

    Soak 200g of soybeans in water for 8 hours. After that, take the beans out and rinse them clean.

    Tip: You should soak the beans before making them to save time.

    Wash the pandan leaves thoroughly and then cut them into small pieces to put in a blender. After that, add 1.5 liters of filtered water and blend until smooth.

    Next, pour the blended mixture through a sieve to extract the pandan leaf juice.

  • Blending soybeans

    Add the soaked soybeans and pandan leaf juice into the blender.

    Then, blend the mixture until smooth and strain it through a sieve for a silky texture.

  • Cooking the milk

    Line a sieve with a cheesecloth and place it over the pot. Then pour the soybean mixture through the sieve once more to remove any residue.

    Stir the milk over medium heat until warm, then add 100g of sugar. Continue stirring until the sugar dissolves and the milk boils, and it’s done.
