  • Mix the vinegar and sugar mixture

    Peel the garlic, crush it, and chop it finely. Wash the chili and chop it small.

    Add the chopped chili into a bowl, add 2 tablespoons of vinegar, 1/2 tablespoon of fish sauce, and 2 tablespoons of sugar, then stir well.

  • Fry the catfish

    Place a pan on the stove, then add cooking oil until hot, then add the catfish to fry. While frying, flip the fish twice to ensure even browning, and when it becomes firm, transfer it to a plate.

    • If you buy the type of catfish that is heavily sun-dried and salty, you can soak it in cold water for about 30 minutes before cooking to reduce the saltiness!

    You use the fish frying oil to heat, and then continue to add garlic to sauté until fragrant and golden.
