Pick the young leaves of the water spinach. Next, soak the vegetables in a little diluted salt water and rinse them 1 – 2 times with clean water, then drain.
To remove dirt and soften the dried shrimp, before cooking, wash the shrimp with water and place them in a bowl to soak in warm water for 10 – 15 minutes, then take them out.
Chop off the roots of the green onions, wash them clean and let them dry, separate the green onion tops, and chop the green onion leaves finely.

Add the green onion tops into a mortar along with 1/2 teaspoon of ground pepper and pound until finely mixed.
When the green onion and pepper mixture is fine, add the dried shrimp and continue pounding until the shrimp is crushed to a moderate consistency.
