How to choose fresh green papaya
- To make the salad, you should prioritize selecting raw papaya, also known as green papaya. In particular, it is important to buy either duck-billed papaya or freshly harvested papaya to ensure the dish is crunchy and fresh.
- You can check the freshness of the green papaya by gently pressing the surface of the fruit with your hand. If the papaya flesh feels firm, then it is a good choice.
- Avoid buying papayas that are overly soft, bruised, or show signs of insect damage.
How to Prepare Papaya Salad

Prepare the Papaya
After purchasing the papaya, use a knife to peel off the skin, then cut it lengthwise into 4 or 6 relatively equal parts depending on the size of the fruit.
Next, soak the pieces of papaya in clean water diluted with 1 teaspoon of salt. Remove and place in a basket to drain.
Then, cut the papaya into thin strips for eating, rinse again with water mixed with a little salt and the juice of 1 lemon, and then transfer to a bowl.

Prepare the other ingredients
For the herbs, remove the old leaves and stems, keeping the young leaves, wash them clean, and then shake off the excess water. After that, chop the herbs into pieces about 1/2 finger thickness.
Peel the garlic, crush it, and then use a knife to remove the stems from the chili peppers. Next, finely chop the garlic and chili together.
Roast the peanuts over medium heat until cooked, let them cool, and then remove the outer shell. After that, you can either crush them or leave them whole depending on your preference.
Wash the lemon with clean water, cut it in half horizontally to squeeze out the juice.

Mix sweet and sour papaya salad
Put the shredded green papaya into a large bowl, then add 2 teaspoons of seasoning powder and mix well.
Slowly drizzle the prepared sweet and sour sauce into the bowl and mix thoroughly. Next, let the papaya soak in the sauce for about 7 – 10 minutes.
Add roasted peanuts and finely chopped herbs, and continue to mix well to complete the dish.
