  • You should choose papayas that have a smooth green skin with a few yellow spots, are shiny, and when pressed, they should have a moderate firmness because this type of papaya is very suitable for making salad due to its crispy and fresh quality.
  • Choose fruits that are of moderate size, not too large, elongated in shape, feel heavy in hand, and have a light, natural fragrance.
  • Avoid selecting papayas that feel soft and mushy when pressed, show signs of wilting, and are no longer fresh due to being stored for too long, as these fruits will diminish the flavor of the dish when processed.

How to choose fresh and delicious carrots

  • You should choose carrots that are bright orange in color, of moderate size (not too large), with a smooth skin, and feel firm when held, not soft or mushy.
  • Avoid selecting carrots that are misshapen, have cracked skin, and show signs of bruising or wilting, as these are carrots that have been stored for too long, are no longer fresh, and will not ensure the flavor of the dish when cooked.

How to prepare Papaya Carrot Salad

  • Prepare the vegetables

    You need to prepare 2 bowls of diluted saltwater to soak the vegetables.

    For the carrots, wash them thoroughly with water, trim both ends, and peel off the outer skin, then shred them. After that, place the shredded carrots into 1 bowl of diluted saltwater and soak for about 10 minutes to enhance their crispness.

    Also, wash the papaya well with water, peel it, and cut off the stem. Then, you will use 1/2 of the papaya and shred it for the salad.

    Next, place the shredded papaya into the second bowl of diluted saltwater and soak for 10 minutes.

    Tip:
    • Before peeling the papaya, use a sharp knife to lightly score the entire length of the fruit to allow the latex inside to drain out, so that when you peel it, it won’t stick to your hands.
    • When shredding the vegetables, you should shred them into long strips to enhance the appeal of the dish.

    Wash the Vietnamese mint, pick the young leaves, and chop them finely.

  • Make the dipping sauce

    Peeled garlic, use about 4 – 5 cloves. Then, you will mince or use a mini meat grinder to grind the garlic and chili to make the dipping sauce.

    Add to a bowl 2 tablespoons of cooled boiled water, 1.5 tablespoons of sugar, 1 tablespoon of lemon juice, stir well and adjust the seasoning to suit your family’s taste.

    Next, add 2 tablespoons of fish sauce, 1 tablespoon of chili sauce, and the minced garlic and chili to complete the dipping sauce.

  • Pounding the peanuts and mixing

    The papaya and carrots, after being soaked for the right amount of time, should be taken out, washed thoroughly with water to reduce the saltiness, and drained.

    Add the roasted peeled peanuts into a mortar and pound them until finely crushed.

    Next, prepare a large bowl to mix the salad. Add all the papaya and carrots and mix well. Then add in 2/3 cup of fish sauce and continue to mix well so that the salad absorbs the dressing evenly.

    Finally, add the Vietnamese coriander and 2/3 of the crushed peanuts, mix well, and the delicious, attractive salad is complete.
