  • You should choose duck-billed papayas to make salad (those papayas that are elongated). The best papayas are usually the two-skin type, with a yellow outer skin and small green specks. Because those fruits have very dense flesh.
  • To make the salad crunchy, sweet, and fragrant, choose fresh fruits that feel heavy, with sap still sticking to the stem, and firm flesh. If the fruit has been harvested for a long time, the flesh will be soft, and these fruits will not be crunchy and fragrant when shredded.
  • You should also avoid buying papayas on rainy days or if it has rained a few days prior, as papayas during that time can be very bland.

  • Choose dried shrimp that has a natural reddish-pink color, with firm shrimp meat; when held, it feels heavy and dry.
  • Avoid buying dried shrimp that are too pale or have an unusual dark red color and a strange smell.
  • Do not buy dried shrimp that are moldy; when held, they feel sticky, and if you squeeze them lightly, the shrimp meat should not be firm.

  • Prepare the ingredients

    Take the papaya you bought, cut it in half, remove the seeds inside, and use a grater to shred the inside of the papaya until all the flesh is gone.

    Tip: You can also peel the papaya, wash it briefly with water to remove the sap, then cut it in half and use a grater to shred from the outside in, the whole papaya too!

    Next, put the shredded papaya into a bowl of cold water, knead and wash the papaya, then remove it to a colander to drain.

    For the rice paddy herb, pick the leaves, then wash them clean with water and let them drain. If you prefer smaller pieces, you can cut them in half or thirds as desired!

    After purchasing dried shrimp, soak them in a bowl of clean water for 10 minutes, then place a pan on the stove, add the soaked dried shrimp and the soaking water, boil it, and cook the dried shrimp until the water is almost gone. Then transfer the dried shrimp to a strainer to drain.

  • Mixing the salad

    You put 1 tablespoon of fish sauce, 1 tablespoon of sugar, and chop 1 chili, then stir well until the sugar completely dissolves.

    Put the prepared papaya into a bowl, then add the mixed sauce, fried dried shrimp, squeeze in the juice of 1 lemon along with some Vietnamese coriander into the bowl, and mix well so that the seasoning is absorbed by all the ingredients, and you can serve it on a plate to enjoy right away!
