  • To ensure quality, you should buy duck intestines at reputable stores and supermarkets. When buying, pay attention to the expiration date and the outer packaging!
  • When choosing duck intestines, you should select those that are dark red and bright. Use your hand to press lightly; they should feel firm and not crushed or mushy.
  • Avoid choosing duck intestines with dark bruises or pale colors, and any unusual odor as this often indicates that the intestines have been stored for too long or have gone bad.

How to choose fresh and delicious duck meat

  • Fresh and delicious duck meat will have light yellow skin, shiny and smooth, with bright red meat inside.
  • Press lightly with your hand; the duck meat should be quite firm and have a slight elasticity, and if the surface is dry, then this is good duck meat.
  • Avoid choosing duck meat with dark bruises, spots, or pale-colored meat inside as these are signs that the duck has been stored for too long or is sick.

  • Prepare the Ingredients

    Peel the shallots, cut off the roots, then wash and slice them thinly. Peel the ginger, wash half a piece, crush it, and slice the other half into strips, then place it in a bowl.

    Peel the turmeric, wash it, and pound it finely to marinate with the duck intestines later. Remove any spoiled or yellow leaves from the various fresh vegetables, then wash them and drain in a basket.

    After marinating for 15 minutes, place the duck meat and intestines into a large bowl to prevent the steam from spilling out while cooking. Place the bowl of duck meat and intestines into a steaming pot.

    Steam the intestines for about 10 – 15 minutes over medium heat until fully cooked. Turn off the heat and remove the steamed intestines, then add sliced vegetables, onions, and roasted peanuts on top.
