    • Rub with salt: After buying the pig tails, rinse them briefly with water, then rub salt on the surface of the pig skin to clean and eliminate odors. Rinse several times with water until clean.
    • Wash with lemon: You can use white wine, ginger, salt, or lemon to rub on the pig tails, leaving it for about 5-10 minutes, then rinse again with clean water.
    • Wash with ginger: Soak the cleaned pig tails in a mixture of ginger and alcohol for about 3 minutes, then remove and rinse again with water.

  • Prepare bamboo shoots and vegetables

    For bamboo shoots, remove the old parts and only take the young parts, which can be cut into pieces about 1/3 of a finger thick or carved into flowers to make the dish more appealing.
