How to choose fresh and delicious ingredients
How to choose fresh and delicious pig tails
- When buying pig tails, you should choose tails that are moderately large, with little fat, looking fresh, with lean meat, and have the distinctive aroma of pork.
- It is advisable to go to the market in the early morning to select the best quality tails.
- Choose tails with smooth skin, bright color, elastic skin, rosy, and no foul odor because this indicates a healthy pig, making it safe and delicious to buy.
- Avoid choosing tails that are too small as they may come from sick piglets, which will not be safe to eat.
How to choose delicious taro
- You should choose taro that has a round, even shape and is of moderate size like a chicken egg.
- Additionally, good taro will have a rough skin, many roots, and numerous eyes on the tuber, with dirt clinging to the skin.
- Avoid choosing taro tubers with few eyes, smooth skin, and high weight as these tubers will not be creamy and delicious.

How to make Pork Tail Soup with Taro

Prepare and marinate the pork tail
The pork tail you buy should be washed clean with salt, then use a knife to cut it into small pieces about the length of two fingers.
Next, put a pot on the stove, add 500ml of water, boil over high heat for about 2 minutes until the water boils, then add the pork tail, blanch for about 1 minute, then remove and rinse with clean water.
To marinate the pork tail, add the pork tail, smashed shallots, and garlic, 2 teaspoons of fish sauce, 2 teaspoons of seasoning powder, 1 teaspoon of monosodium glutamate, and 1 teaspoon of pepper into a bowl. Then mix well and marinate for 15 minutes.
How to prepare pork tail without smell- Method 1: Blanch the pork tail in water at 70 degrees Celsius for about 5 minutes, then use a knife to scrape off the hair and dirt on the pork tail.
- Method 2: Soak the cleaned pork tail in a mixture of ginger and rice wine for about 3 minutes, then remove and rinse with clean water.
- Method 3: Crush ginger in a mortar, then add 100ml of white wine, and mix well.
-
Prepare other ingredients
Peel the taro with a knife to remove the skin, then wash it clean and cut it into bite-sized pieces.
For the herbs and sawtooth coriander, just wash them clean and cut them into small pieces.
How to peel taro without itching
- Method 1: When buying taro, use dry hands to peel the skin and soak it in diluted salt water immediately after peeling to remove the itching substance.
- Method 2: Wear gloves when peeling taro to prevent the itching substance from sticking to your skin. However, this method may be a bit inconvenient for you while peeling.
-
Stir-fry pork tail
Place a pot on the stove, add 2 tablespoons of cooking oil, wait until the oil is hot, then add 3 teaspoons of minced shallots, stir-frying until fragrant, then add the marinated pork tail.
Stir-fry consistently over medium heat for about 3 minutes until the pork tail is firm.
-
Cook the soup
After the pork tail is stir-fried and firm, add 2 bowls of filtered water to the pot and simmer over medium heat for about 15 minutes until the pork tail is tender.
Then adjust the seasoning to taste, add the peeled taro, and simmer over medium heat for about 8 minutes until the taro is soft, then add the chopped herbs and turn off the heat.
Tip: To avoid the taro becoming mushy, do not stir or add any more seasoning while simmering the taro. -
