  • For ground pork: You should choose ground pork that has a bright color, with a mix of lean and fatty meat; also, make sure the meat is dry, indicating it is fresh and just ground, do not choose meat that shows signs of being watery.
  • For pork bones: When choosing, you should pay attention to check the smell and condition of the bones; good bones will not have a strange odor. The bones should be bright in color, not pale and not cold.

  • For fresh shrimp: You should choose shrimp with a transparent outer shell that still has a slight smell of seawater. If you see shrimp that are slimy, you should not choose them. Fresh shrimp that are not chemically treated have slightly curved bodies, firm flesh but are not unusually plump.
  • For dried shrimp: Delicious dried shrimp typically have a bright red natural color. If dried shrimp are light red or dark red, they have been stored for a long time and cooked before drying, or have been colored with dye. Good dried shrimp are firm, solid, and do not have a strong odor.

  • Prepare pork bones and shrimp

    Wash the shrimp clean, use scissors to cut off the sharp spines on the top of the shrimp head, the tail, and the legs, then drain. After that, put them in a pot to boil or steam for 10 minutes.

    Tip:
    • You can peel off the shell and devein the shrimp as well.
    • If you don’t like to eat shrimp, you can skip this ingredient.

    To eliminate the smell of pig bones, soak them in diluted salt water for about 10 minutes, then rinse thoroughly with clean water.

    Effective ways to eliminate meat smell:
    • Method 1: Clean the pork you bought, then briefly blanch it in boiling water for about 2 – 3 minutes, then remove the meat and rinse it with clean water.
    • Method 2: You can also soak the cleaned pork in diluted salt water for about 25 – 30 minutes. Once the time is up, remove the meat and rinse it under running water.
    • Method 3: Additionally, ingredients such as dried onions, white wine, vinegar, ginger, lemongrass, etc., also help to eliminate the smell of meat. When blanching the meat briefly, you can add these ingredients.

  • Prepare other ingredients

    Peel the carrot, wash it clean and cut it in half; one half into small cubes, and the other half into pieces.

    Peel the white radish, wash it clean and cut it into pieces. Wash the chives, cut them into pieces about 1.5 finger lengths. Wash the accompanying vegetables, chop them as desired for easy eating.

    Put the quail eggs into a pot with 1 teaspoon of salt and boil for about 5 – 7 minutes until cooked, then let them cool and peel.

  • Marinate meat and bones

    Put 200g of ground meat into a bowl, mix with the diced carrot, 1 finely chopped (or sliced) shallot, and add seasoning: 1/2 teaspoon of salt, 1/2 teaspoon of pepper, 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate. Mix well and marinate for about 15 minutes for the meat to absorb the flavor.

    Put the prepared bones into another bowl, marinate with seasoning including 3 sliced shallots, 1 tablespoon of sugar, 1 teaspoon of salt, 1 teaspoon of monosodium glutamate, 1 teaspoon of pepper, 1 tablespoon of seasoning powder, and marinate for about 30 minutes.

  • Sauté minced meat

    Place a pan on the stove with 1 tablespoon of cooking oil and heat it, then add the marinated minced meat and sauté evenly for about 10 minutes until the meat is completely cooked.

    Note: You only need to season this meat lightly, no need to season it strongly.

  • Cook the broth

    Place a pot on the stove, add 1 tablespoon of cooking oil and heat it, then add the dried shrimp and pork bones and sauté for about 5 minutes until the meat firms up.

    Next, pour 1.5 liters of water into the pot, boil for about 15 minutes, then add the white radish and carrot and simmer for an additional 20 minutes.

    Tip: To cook the noodle soup with the most authentic broth flavor, you should add dried shrimp and dried squid.

    After the stewing time, add 3 tablespoons of sugar, 1 tablespoon of fish sauce, 1 tablespoon of seasoning powder, 1.5 teaspoons of monosodium glutamate, 1 teaspoon of salt, and a little pepper. Use spoon to stir and dissolve the seasonings, taste and adjust to your liking, then add the steamed shrimp and cook for another 5 minutes before turning off the heat.

    When eating, you only need to blanch the noodles in boiling water for about 10 seconds, then put them in a bowl, add the bones, fresh shrimp, quail eggs, and stir-fried minced meat, and add a bit of fried shallots and chopped chives. Pour over the broth and serve with fresh vegetables for the perfect taste.
