How to make boiled egg jelly

  • Boil the eggshells

    After removing the egg white and yolk, wash the eggshells thoroughly with cold water.

    Put about 500ml of water in a pot, add the eggshells, press down to make them sink to the bottom of the pot, and boil until the water reaches a rolling boil, then turn off the heat.

    Remove the eggshells, place them in a basket, with the hole side down to prevent water from accumulating inside.

  • Cook mung beans

    Soak the mung beans in water for about 1 hour, then rinse them thoroughly and put them in a pot with about 500ml of water, bringing it to a boil.

    After about 20 minutes, the mung beans will be soft and all the water will be absorbed, then turn off the heat, scoop them out onto a plate, and let them cool.

    When the mung beans have cooled, pour them into a mortar, grind them finely, and then pour this mixture into a pan.

  • Cook mung bean filling

    Place the pan with the mashed mung beans on the stove, add 30g of sugar, stir well until the sugar and mung beans thicken.

    Then, turn off the heat, scoop the mung beans onto a plate and let them cool.

  • Shape the egg yolk

    When the mung beans are cool, divide the mung bean mixture into 8 portions and use your hands to roll them into small balls, about the same size as the egg yolk.

    Add 5g of sugar to a bowl containing the remaining 30g of sugar, and mix well. Then, gently pour the mixture into a pot containing 500ml of water, pouring while stirring continuously to prevent the powder from clumping.

    Place the pot on the stove, adjust to low heat, and stir continuously. Once the jelly mixture boils, add 2 tablespoons of condensed milk, stir well, and cook for another 2 minutes, then turn off the heat.

  • Shaping the egg jelly

    Gradually pour the jelly mixture into about 1/3 of the egg, then wait about 5 minutes for the jelly to set.

    After 5 minutes, gently place the round mung bean in the center of the egg, and finally pour the remaining jelly mixture to fill all 8 eggs.

    Once finished, place them in the refrigerator for 3 hours.

    Tip: To make shaping easier, you can place the egg in a small wine glass to stabilize it.
