How to prepare Spicy Stewed Chicken Feet

  • Prepare the chicken feet

    Wash the chicken feet with salt, cut off the sharp nails, then cut them in half.

    Put the chicken feet into a large pot or pan, then add 1 liter of water and 100ml of white wine, and boil for about 5 minutes before removing and rinsing clean.

  • Prepare the chicken feet

    Wash the chicken feet with salt, vinegar, or a little wine, then cut off the sharp nails.

    Place a pot of water on the stove, add chicken feet along with 1 tablespoon of white wine, 1 teaspoon of salt, and 20g of crushed ginger, and boil for about 5 minutes from the moment the water boils, then remove and drain.

Mince the top part of the lemongrass, cut the body into short pieces, crush it, and then add it to the pan, sautéing the ingredients until fragrant.

    Add 200ml of water to the pan along with 1 tablespoon of fish sauce, 2 teaspoons of seasoning, 1/2 tablespoon of sugar, and 1 teaspoon of monosodium glutamate.

  • Water-injected chicken feet have a uniform and beautiful appearance, plump, with the toes swollen; when squeezed, they feel soft. Normal chicken feet are small and unattractive, with four toes bent and curled inward.
  • There are two types of chicken feet: local chicken feet and industrial chicken feet. Industrial chicken feet are more popular because they have more meat, making it easier to prepare boneless chicken feet dishes.
