1. Prepare ingredients and tools

Ingredients and tools needed

  • Chicken feet: 500g.
  • Tools: 1 small knife, cutting board, plastic gloves (if necessary).

How to choose good chicken feet for deboning:

  • Buy chicken feet from reputable sources with clear origin.
  • Choose chicken feet that have a natural pinkish-white color, without any green, red, or yellow spots, and that do not have a foul smell or sliminess when touched.
  • Water-injected chicken feet appear even and beautiful, plump, with swollen toes that feel soft when squeezed. Normal chicken feet are small and unattractive, with 4 toes curled inward.
  • There are 2 types of chicken feet: native chicken feet and industrial chicken feet, with industrial chicken feet being more popular because they contain more meat, making them convenient for the deboned chicken feet dish.

2. How to remove the bones from chicken feet

Step 1: Clean the chicken feet

Buy chicken feet and wash them thoroughly with diluted salt water. If they are frozen, they must be thawed naturally before starting the preparation. Cut off all the nails and discard the upper part of the chicken feet, keeping only the meaty toe parts.

Put the chicken feet into a pot, add just enough water, and boil for about 15 minutes until the chicken feet are cooked. At first, keep the heat high; when the water boils, reduce to low heat to cook the chicken feet evenly. If boiled too long, the chicken feet will become mushy and tasteless. Add some crushed ginger to make the chicken feet more fragrant.

Use a toothpick to poke the chicken feet; if no pink blood remains, they are cooked. When the chicken feet are done, immediately transfer them to a bowl of ice water to keep them crunchy. Soak for about 10 minutes until completely cool, then take them out to drain.

Place the feet on a cutting board, and use a small knife to cut into each toe and the remaining part of the foot.
