How to choose fresh ingredients
How to choose fresh squid
- First, when choosing squid, pay attention to the color; fresh squid will have a shiny color, with the body being opaque white like milk and clear eyes.
- Good squid should feel firm and elastic to the touch, and when pressed, it should return to its original shape without denting.
- Avoid choosing squid with cloudy, yellow eyes or leaking fluid, and those that feel soft and have an unusual odor.
How to choose fresh and delicious pineapples
- You should choose pineapples that have an eye-catching yellow color or may have a bit of green mixed in because they will be just ripe and have a sweet taste.
- Choose pineapples that are slightly round and short rather than long ones because they will have more flesh. The larger the eyes of the pineapple, the better because these fruits are mature and naturally ripe, not due to chemicals.
- Pineapples that are just ripe will have a moderate fragrance, not too strong. When you press your hand into the pineapple, you should feel a moderate softness and the skin is usually slightly wrinkled; that means the pineapple is just ripe.
- Do not choose fruits that are too green as they may not be ripe and those with dark brown spots due to being left for too long. Additionally, avoid buying pineapples that are dented when pressed as they are likely spoiled due to being left for too long; hard pineapples may not be ripe yet.
How to choose juicy ripe tomatoes
- Good tomatoes are those that have a bright red color with intact skin. The seeds inside should be yellow, and the flesh should be red. You should choose tomatoes that have a faint fragrant smell, which you can easily sense.
- Naturally ripe tomatoes usually have the stem tightly attached to the top of the fruit; when choosing, you should gently pull to see if the stem detaches. If it comes off, the tomato may have been left too long.
- You should not choose tomatoes that have an uneven shape, bruised skin, scratches, or lack a fragrant smell.
How to choose fresh and delicious bean sprouts
- You should choose bean sprouts with long roots instead of short, stubby ones that are dark in color due to chemical soaking. Additionally, bean sprouts made using natural methods have a slightly slender shape, with uneven strands and a milky white color.
- Fresh and delicious bean sprouts have green seeds, with no black spots and not separated from the bean sprout strands. If the beans have black spots or are separated from the strands, it may be because the seller has kept them for too long.
- You should avoid buying visually appealing bean sprouts that are bright white, as they may have been chemically soaked. Also, steer clear of bean sprouts that are gray, black, and have a foul smell, as they may be spoiled.
- If you have a little time and want to ensure the safety of your family’s health, you can make bean sprouts at home using the recipe shared by TasteVN below.
How to prepare Pineapple Squid Soup
-
Prepare and blanch the squid
Buy squid and wash it thoroughly, then firmly grasp the squid’s head and pull it away from the body, gently removing the ink sac. If you accidentally break the ink sac, rinse it thoroughly with clean water.
Use a knife to cut off the squid’s eyes and beak, then peel the squid’s skin. After that, wash the head and entrails of the squid until the water runs clear. Lightly score the squid body in a dragon scale pattern to make the squid pieces look nicer, and cut into bite-sized slices.
Place a pot on the stove, turn the heat to high, add 500ml of water, and bring to a boil. When the water is boiling, add ginger and the prepared squid, stirring well for 1 – 2 minutes, then turn off the heat. After that, use a ladle to remove the squid and let it drain.
How to eliminate the fishy smell of squid: Use white wine, salt, and a few crushed slices of ginger to make a mixture and soak the squid for about 5 minutes, then gently squeeze the squid to release any bubbles and rinse clean with water. -
Prepare other ingredients
You wash the ingredients including green onions, chili, ginger, dill, and tomatoes. Chop the green onions and dill, cut the tomatoes into wedges, peel the ginger, and slice the chili thinly.
Then, you use a knife to peel the pineapple, remove the eyes, wash it thoroughly, and cut it into bite-sized pieces. Peel and slice the shallots thinly. Rinse the bean sprouts and let them drain.

Squid and Pineapple Soup
Place a pot on the stove, add 2 tablespoons of cooking oil to the pot and turn the heat to medium. When the oil is hot, add sliced shallots and sauté until fragrant. Then add tomatoes, pineapple, and a few slices of chili, and stir for about 2 minutes until the tomatoes are nicely colored.
Next, add about 100ml of water to the pot, 2 slices of ginger, and 1/3 tablespoon of fish sauce, stir well for another minute to let the tomatoes and pineapple release their aroma.
Add 1 liter of water to the pot, bring to a boil for about 5 minutes, then season with 1/2 tablespoon of fish sauce, 1 teaspoon of salt, 1/2 teaspoon of sugar, and 1/2 teaspoon of ground pepper, then add all the prepared squid, cover, and boil for about 3 – 5 minutes.
Finally, add all 100 grams of bean sprouts and the chopped scallions and dill to the pot for about 1 minute until the soup boils, then turn off the heat.
