    Buy squid and wash it thoroughly, then firmly grasp the squid’s head and pull it away from the body, gently removing the ink sac. If you accidentally break the ink sac, rinse it thoroughly with clean water.

    Use a knife to cut off the squid’s eyes and beak, then peel the squid’s skin. After that, wash the head and entrails of the squid until the water runs clear. Lightly score the squid body in a dragon scale pattern to make the squid pieces look nicer, and cut into bite-sized slices.

    Place a pot on the stove, turn the heat to high, add 500ml of water, and bring to a boil. When the water is boiling, add ginger and the prepared squid, stirring well for 1 – 2 minutes, then turn off the heat. After that, use a ladle to remove the squid and let it drain.

    Add 1 liter of water to the pot, bring to a boil for about 5 minutes, then season with 1/2 tablespoon of fish sauce, 1 teaspoon of salt, 1/2 teaspoon of sugar, and 1/2 teaspoon of ground pepper, then add all the prepared squid, cover, and boil for about 3 – 5 minutes.

    Finally, add all 100 grams of bean sprouts and the chopped scallions and dill to the pot for about 1 minute until the soup boils, then turn off the heat.
