How to choose fresh and delicious pork loin ribs
- You should buy pork loin ribs that have a layer of bright white fat on the outside, with fat and meat firmly sticking together, as this indicates good quality ribs.
- Prioritize choosing pieces of pork loin ribs with a moderate amount of lean meat and even muscle fibers; if the muscle fibers are large, the meat may have been injected with lean meat enhancers, and you should avoid buying it.
- You should choose pieces of rib meat that are bright red in color, not too shiny, and when touched, the meat has good elasticity, not pale or slimy.

How to prepare Grilled pork loin ribs using an oven

Prepare the ribs
After buying pork loin ribs, wash them clean with water and let them drain. Next, tenderize the meat to make it thin, cutting around the edges so the meat doesn’t shrink when grilling.
Marinate the meat with 2 stalks of lemongrass cut into pieces and smashed, 3 shallots, 5 cloves of garlic, and 3 sliced chilies, then mix well so the ribs will be fragrant and help reduce the fishy smell when grilling.

Make the marinade sauce
Put 1 teaspoon of salt, 2 tablespoons of seasoning, 3 tablespoons of sugar, 1/2 tablespoon of monosodium glutamate, 1/2 teaspoon of ground pepper, and 1/2 teaspoon of five-spice powder into a bowl.
Then, add 2 tablespoons of condensed milk, 2 tablespoons of fish sauce, 2 tablespoons of chili sauce, 1 tablespoon of oyster sauce, 1 tablespoon of caramel coloring, and 3 tablespoons of cooking oil to the bowl and stir well until the sauce mixture is dissolved.

Marinate the ribs
Pour the dissolved sauce into the bowl of pork ribs, mix well and use your hands to massage for 5 minutes to allow the meat to absorb the seasoning. You can wash your hands or wear plastic gloves to ensure hygiene.
Then, squeeze 1/4 of an orange into the bowl, mix well and let the meat rest for about 2 – 3 hours for the best results. However, if you don’t have time, you can let the meat rest for 30 minutes before grilling.

Grilling ribs with the oven
Line the baking tray with aluminum foil, place the meat on the tray and put it in the oven at 180 degrees Celsius for 20 minutes.
After 20 minutes, brush the remaining marinade over the meat, then turn it over to the other side, and grill at 200 degrees Celsius for another 15 minutes, brushing on more seasoning and turning the meat every 5 minutes.
