What is Onsen tamago?
- Onsen tamago is a traditional cold-eaten egg dish from Japan.
- The eggs (tamago) are slowly boiled by placing them in a mesh basket tied with a rope and lowering them into hot springs (onsen).
- The egg has a special structure with the white tasting like soft and creamy custard while the yolk is firm but has the color and flavor of a raw yolk.
How to choose fresh eggs
- You should choose eggs with a hard shell, a dark brown exterior, an even color, and no cracks or black spots.
- When you touch the egg, if it feels bumpy and slightly rough, it is a fresh egg. If you shake them next to your ear and hear no noise, you should select these eggs.
- Avoid buying eggs with pale shells, black spots, and a smooth surface as these eggs have been stored for quite a while and may not be safe to eat.
