Ingredients for Onsen tamago (onsen egg) For 4 people

Eggs 4 pieces Dashi stock 60 ml Mirin 8 ml Soy sauce 22 ml Dried bonito flakes katsuobushi 3 gr Green onions 2 stalks

What is Onsen tamago?

  • Onsen tamago is a traditional cold-eaten egg dish from Japan.
  • The eggs (tamago) are slowly boiled by placing them in a mesh basket tied with a rope and lowering them into hot springs (onsen).
  • The egg has a special structure with the white tasting like soft and creamy custard while the yolk is firm but has the color and flavor of a raw yolk.

How to choose fresh eggs

  • You should choose eggs with a hard shell, a dark brown exterior, an even color, and no cracks or black spots.
  • When you touch the egg, if it feels bumpy and slightly rough, it is a fresh egg. If you shake them next to your ear and hear no noise, you should select these eggs.
  • Avoid buying eggs with pale shells, black spots, and a smooth surface as these eggs have been stored for quite a while and may not be safe to eat.

  • Boil water

    First, place a pot on the stove. Pour in 1 liter of water and boil on high heat for about 10 minutes. When the water boils, remove the pot and add 200ml of filtered water.

  • Boil the eggs

    Prepare a ladle to hold the eggs. Next, gently place the eggs into the pot of water that has been prepared. Cover the pot and let it sit for about 17 minutes.

  • Making the sauce

    You add 60ml of dashi water, 8ml of mirin, and 22ml of soy sauce into a new pot and boil for about 10 minutes until the mixture boils.

    Then you turn off the stove and add 3g of dried bonito flakes katsuobushi, soaking for about 30 seconds. Next, you filter the mixture through a strainer.

  • Completion

    First, you chop the green onions. Take the eggs out of the pot and place them in a bowl and let them sit for about 5 minutes. You separate the eggs and place them in a small dish.

    Drizzle the prepared sauce on top and garnish with a bit of green onion. Now you can enjoy it.

    The onsen tamago dish has a round shape with soft egg white and just the right amount of set yolk, making it very appealing.
