Cook Winter Melon Water
Put dried winter melon, red dates, roasted sugarcane, peeled and chopped, pandan leaves, and hulled monk fruit into the pot.
Add 4 liters of water and boil for about 40 – 45 minutes.
Tip: Do not use fresh winter melon to make this water as it will taste sour. -
Prepare Fresh Winter Melon
Brush off the powder on the winter melon.
Remove the pulp and seeds but keep the skin. The skin is the secret to the alluring fragrance of winter melon tea.
Slice the winter melon thinly.

Make Winter Melon Jam
Put the sliced winter melon into a pan and stir-fry with brown sugar and yellow sugar.
Stir-fry until the mixture thickens slightly.
Tip: This method helps us extract all the water and fragrance from the fresh winter melon without making it sour. -
Filter winter melon water
After cooking the winter melon water for 40 – 45 minutes, add the freshly cooked winter melon jam and cook for another 15 minutes.
Pour all the winter melon water into a filtering bag to obtain clear water without residue.

Steep black tea
Add winter melon tea essence if you want to sell it.
If not, at this stage, you can already brew it into tea and enjoy it.
To make black tea, add one bag of black tea to the freshly filtered tea while it is still hot.
Steep the black tea for 10 minutes.

Prepare sweet squash tea

- 170 gr ice cubes
- 190 ml squash water
- 25 gr black jelly
- 25 gr noodle jelly
- 5 gr chia seeds
