Bitter melon 1 kg Fresh milk 200 ml Sugar cane 200 gr Pandan leaves 4 stalks Cilantro roots 5 pieces (or 5 monk fruit) Chinese angelica 10 gr Grass jelly powder 25 gr Corn starch 10 gr Rock sugar 200 gr Brown sugar 50 gr White sugar 50 gr

How to select bitter melon for delicious tea

  • You should choose ripe bitter melon, with dark green skin and a large size to make bitter melon tea, as this will make the tea sweeter.
  • Do not choose young, small bitter melons with light green skin, as cooking young bitter melon will make the tea sour.

How to choose and buy sugarcane for winter melon tea

  • You should choose mature sugarcane sticks because they have less water, and when cooked, they only create a fragrant aroma and a mild sweetness for winter melon tea.
  • Do not choose young sugarcane as it contains more water, the sugarcane smell will overpower the winter melon aroma, and it may even cause a sharp sweetness.

How to make winter melon milk tea

  • Prepare the winter melon

    Wash the winter melon thoroughly, peel off the outer fuzz, and then cut it into small pieces so that it cooks faster. You can leave the skin on or remove the seeds to make the winter melon water sweeter and less sour.

    Place the sugarcane, cilantro roots, and pandan leaves at the bottom of the pot. Put the winter melon and rehmannia on top. Pour in 2 liters of water, cover, and turn on medium heat to cook for 30 minutes to make the winter melon water.

    After 30 minutes, open the lid, add 200g of rock sugar, and cook for another 15 minutes. Once the winter melon is soft and fragrant, turn off the heat and let it cool.

    After the winter melon tea has cooled, strain it through a sieve to extract the liquid, discarding the solid ingredients. Squeeze the winter melon to extract all the juice. And there you have your winter melon tea.

  • Making Agar Jelly

    Dissolve 10g of cornstarch and 25g of agar powder in 100ml of water, stirring well until the starch and water are combined.

    Place a pot on the stove and bring 400ml of water to a boil. When the water is boiling, add the dissolved agar mixture and cook. Reduce the heat and cook for 3 – 4 minutes, stirring continuously until the starch is completely dissolved.

    Pour through a sieve to filter out any undissolved starch, then place in the refrigerator for 2 hours to let the agar set. After that, take the agar jelly out and cut it into small pieces as desired.

  • Cooking black sugar

    Place a pot on the stove, add 50g of black sugar, 50g of white sugar, and 50ml of water into the pot. Adjust the heat to low, stir gently, and cook until the sugar mixture is completely dissolved and thickened, then turn off the heat.

    First, use a spoon to scoop some black sugar and spread it on the rim of the glass for decoration. Pour winter melon tea into 1/3 of the glass, continue adding milk to about 1/3 of the glass, then add ice according to your preference.

    Finally, add the grass jelly on top, and you can enjoy your winter melon milk tea!
